@@Prairiechicb For cake flour you put 1or2 Tbsp of corn starch in to the total flour amount of each cup of flour..Corn Starch is low gluten and is a finer flour it will create a higher density of cake with less air bubbles
That’s because the bread flour recipe is wrong. For bread flour I subtract 5 grams of flour per 120g (1cup) and replace it with 5 grams vital wheat gluten.

Exactly my question. In another video with the same measurements the person reduced 2 teaspoons from all purpose flour and added rice flour to make it bread flour. And I think it makes sense because rice flour tends to cause crispness and may eventually cause more air inside bread/cream puffs.

@@JamieJamie2011 The addition should be vital wheat gluten to make bread flour. Anywhere from 1 teaspoon to 3 tablespoons depending on the result desired. Vital wheat gluten adds protein which alters the chewiness of the end product, the more vital wheat gluten the chewier the bread.

Anyway...for BREAD Flour - 1 Cup of AP flour (125 grams), remove 1.5 teaspoons of the flour and replace it with 1.5 teaspoons of Vital Wheat Gluten. Whisk well. Any supermarket or spice store should sell this. Maybe even a health food store.

Bread flour recipe is wrong. For every 120g of flour replace 5g vital wheat gluten. I buy 50 pound bags of AP flour and change it per recipe
