    2:00 Pretty sure the AP flour rose the highest because it's in the middle of the pan... So as the other two doughs expand the AP has nowhere else to go but up.

    My favorite part was watching you squeeze the dough mounds. I saw a recipe that called for self rising flour, is that a different type from these?

      Self-rising flour is a different type, in the sense that it contains baking powder and salt (hence self-rising). But you can easily make it at home with all-purpose or cake flour. I delve more into self-rising flour in my scones video: ruclips.net/video/YnAFRBw0zQo/видео.html

    Hi, thank you so much for your video! Do you have any tips on making banana bread? Every time I make banana bread with about 2 3 bananas, it comes out dense and chewy so i'm guessing I should use cake flour?

      Yeah banana bread is actually a cake. So use cake flour.

    The best self rising flour for biscuits is Hudson Cream, and it’s hard to find.

    King Arthur's Bread and All Purpose flours vary only by 1% and $1.00USD in gluten protein content, so what gives? Is 1% a big difference?

      I don't think this video was meant to be an encyclopedic examination of flour, just a comparison of the three most common wheat flours found in US grocery stores when they are used for bread. You can also Google your questions about nutrition, etc.
