The philosophy of my channel in a nutshell:
1. Science is for everyone who wants to learn.
2. You don’t need fancy kitchens/ingredients/tools to make amazing food at home.
3. Cooking is about having fun, being curious, and paying attention to the little things that can make all the difference.

Formerly a Stanford-trained biology researcher and health-tech communications professional, I am a content creator who learned everything about food and cooking from resources like Harold McGee’s On Food and Cooking and Kenji Lopez-Alt’s The Food Lab...and most notably lots of trial and error at home. Hey, I'm a big fan of your videos, it's a shame to see that you stopped making them. I think one thing that may be holding your videos back from success is that you have a really long intro. I would start your video with "Have you ever stopped by..." and cut out the fifteen seconds that came before that. I really want to see you succeed, I love your scientific approach to thinking and cooking!

Hi, thank you so much for your video! Do you have any tips on making banana bread? Every time I make banana bread with about 2 3 bananas, it comes out dense and chewy so i'm guessing I should use cake flour?
Yeah banana bread is actually a cake. So use cake flour.
2:00 Pretty sure the AP flour rose the highest because it's in the middle of the pan... So as the other two doughs expand the AP has nowhere else to go but up.

The best self rising flour for biscuits is Hudson Cream, and it’s hard to find.
My mother and grandmother only buy Hudson Creamery Self Rising Flour.

How about nutrition? How about additives? How about stoneground vs roller milled? Etc.. etc…
I don't think this video was meant to be an encyclopedic examination of flour, just a comparison of the three most common wheat flours found in US grocery stores when they are used for bread. You can also Google your questions about nutrition, etc.

hello joy i have a question if 3 of this flour use for fried chicken which is better or more crispy?? and which flour get wet faster by sauce like korean fried chicken

King Arthur's Bread and All Purpose flours vary only by 1% and $1.00USD in gluten protein content, so what gives? Is 1% a big difference?

Does active yeast take a lot of time to work (8-9 hours) compared to instant yeast?
Good 2 know. Just got a bread machine. Trying 4 Seeded Rye. Publix doesn't carry anymore . My loaves keep getting caught on the mixing paddles. ANY suggestions??❤
