What great timing! I’ve been struggling with America Test Kitchen’s recipe and just can’t seem to get the pita to puff. Thanks to you, I have a few new things to try next time. Perhaps at some point you could talk about those pickled vegetables? Great job!

The pickled vegetables in the video were inspired by Vietnamese-style pickled vegetables (do chua), so there's actually a little bit of fusion in the pita sandwich. I unfortunately don't have an exact recipe (they were a product of me figuring out what to do with stuff in my fridge), but basically I cut 2 medium carrots and 1 small daikon matchstick size. Then I mixed the strips with a little bit of coarse salt to remove excess moisture for more crunchiness. For the pickling liquid, I reboiled the liquid from my pickled red onions (recipe from Serious Eats), added the veg directly to the hot liquid, and let cool before storing in the fridge.
