All Purpose Flour vs Bread Flour for Pandesal Recipe

- Pandesal Recipe using bread flour or all purpose flour? Which is the better flour to make the pandesal soft and fluffy?
I am no expert in the science behind bread making, but through practical experiment and hands on experience, I am hoping that this video can answer this question.
Recipe for 1 cup of Pandesal:
1 cup flour
100 mL milk
3/4 tsp yeast + 1 1/2 tsp of sugar
2 tbsp canola oil (On the video it says 2 tsp, but it should be 2 tbsp)
2 tbsp sugar
1 egg yolk
3/4 tsp salt

Fact and Theory about nitong dalawang klasing flour:
The main difference between bread flour and all-purpose flour is a matter of protein. Bread flour, which comes in white and whole wheat varieties, has a higher protein content than all-purpose, usually 11-13%. It’s called “bread flour” because most bread requires higher amounts of protein to produce lots of gluten. Gluten is the stringy strands that give bread dough its stretch and elasticity, and baked bread its characteristic chew. Kneading dough develops a network of gluten strands that trap air and produce the airy holes characteristic of many breads. You can use bread flour in place of AP flour when you actually want a chewier result-in pizza dough, for instance-but you don't want to use it in place of cake or pastry flour, or in any baked goods that you want to be light and tender. 😊Enjoy Baking

So if you want a more fluffier texture or softer bread, is less gluten better then?
Bread flour pandesal is chewy while all purpose flour is light and airy if you omit the milk. If you put milk in apf it has the consistency of Monay. Milk makes bread more dense

As first time baker this really helps me. I always use all purpose flour even when I first try to baked pandesal. But after watching this I want to try Bread flour. Thank you! 😊

Best, most delicious pandesal ive tried.. Salamat po!! Ive used half bread flour and half all purpose flour. Hinde na kelangan ng palaman, the pandesal is tasty on its own! Big plus is, it only uses oil.. cuz usually when im making bread i always use butter. This one is even tastier 🖒🖒🖒
Magandang araw po! We found out na iba talga ang lasa kung canola oil instead of butter ang gagamitin. What led me to this is economics din, ang mahal ng butter compared sa canola. I also thought na kung butter ang ginagamit sa Pinas, then it is impossible to sell pandesal ng 1 Pesos (nung panahon ko), so I tried switching the oil. And ayun nga, mas kuha nya ang lasa ng pandesal sa Pilipnas. :) Happy to help and God bless!

I like how you used only 1 cup for each flour. The difference between the two flours is the protein content..Bread flour has more protein in it, between 11 - 13%. Been making pan de sal for 20+ years and I have used both depending on the supplies at the store. Personally, I prefer bread flour. Thanks guys for the video. 👍🏽🙏🏼

@@RoeWeezie The one made with bread flour ended up softer and a little bit fluffier compared to the one made with APF. APF bread was denser and feels heavier. But in the end, you can use any of these two types of flour to make pandesal since they have the same taste but a slightly different texture. God bless!

Kuya Rich thank you so much for making this comparison, really appreciate it. Actually i want to try bread flour for pandesal because of many good reviews i read, unfortunately bread flour is not available in dubai kaya APF na lang muna gamit ko. Salamat kuya.

jellyace10 ,hi! If bread flour hanap mo dito sa dubai you can use po T55 yan po yong tatak ng flour for breads dito po sa dubai and for other pastries po or cakes T45 flour po yong gamitin mo.👍🏻👍🏻👍🏻

Cake flour and self raising flour are the same,plain flour and all purpose flour are the same...sa bread flour,i use bread mix crusty white ..and half of plain flour..50/50 ratio..sana makatulong
Bread flour for Pandesal is definitely better it has a btter texture when cooked than the all purpose flour . I just made one and it's delicious!

bread flour is what commonly use in the Philippines, they call it first class. It has a higher gluten and protein content than AP flour.

There are plenty flour , both bread and all purpose and yeast in Walmart and amazon.
Check ebay po for the yeast :)
APF had lower water absorption and lower protein and therefore slightly weaker gluten kaya dense ang bread while BF has higher water absorption and higher protein kaya malambot ang bread at pag matagal ang proofing, makita mo na ang BF medyo hollow ang internal score nya.
Magandang araw po! I have read baout the difference in protein content between the two, pero ngayon ko lang nalaman na may kinalaman din pala ang water absorption ng harina sa outcome neto. What I noticed, with bread flour naretain nya softness kahit ilang araw na at mas ok ang texture ng laman at may chewiness sya. With APF, a day after or couple of days, tumitigas na sya at parang nagiging crumbs ang laman nya or naghihiwalay hiwalay.

Tonette Queri Sure, no problem. First time na gumawa ako, APF ginamit ko para syang bato after. With mix of bread floor and AF flour, soft pa rin sya. Just put it on a tight container tapos sa ref, ok pa rin pagmicrowave mo or heat up sa oven. 😊

I observed the difference: BF is soft, chewy, and crunchy on the outside. AF is airy, soft, and dry. I prefer bread flour.

I came here to see the difference between AP and BF before. I decided to make a small batch just for two people cuz the bakeries here in my area are always out of bread cz COVID. Haha So I made this last night and I was a little disappointed at first because my dough didn't rise. It took like almost 3 hours to get to double in size, which normally doesn't take much cz I also made a loaf bread while proofing this dough and my loaf didn't take much longer to rise. So anyway, I decided at the last minute, since it was already 10PM, to just throw the dough away in the morning cz the trash has already been taken out. But voila, when I checked on it in the morning, I rose to its size!!! So I baked it, I didn't have breadcrumbs so I just brushed some milk on top and oh my god, the pandesal came out really, really good and so, so tasty! The tastiest pandesal I have ever had! I am never buying pandesal, unless I'm too lazy to knead. Haha Salamat sa recipe mo. I'm pretty sure I've tried your recipe before and I don't remember it turning out this good, but it did this time. So sorry for the longest comment in history, but I just wanna share my experience. And if someone else trying this also didn't get rise on the first hour, don't panic! Just let time do its job. :)

I prefer bread flour, too. I have been baking home baked pandesal for the last few years and did the same comparison last year and came to the same conclusion. Although, there was a shortage of bread flour last year here where I live in Canada due to Covid 19 because more people were staying home and baking more. The worst thing is, a lot of people were hoarding this precious commodity. Supply is much better nowadays. Thanks for sharing! There’s nothing better than a home baked pandesal!

Thank you for comparison. I have both flours but I try to use bread flour for special recipes because the quarantine year made it a commodity now. It took me 2 months to find yeast lol

Cuistot a domicile
Bread flour is specially made for long slow ferment, it would require up to 4 hres to fully develop the flavor and the rize (it should be tested on pizza dough, sourdough bread). All purpose flour would normally take 45 minutes to 90 minutes to fully develop. For type of buns your are doing general all purpose with fast active dry yeast will be best....

Thank you po!😊😊 twice palang po kasi ako nakagawa ng pandesal. 1st try, super lambot nya pa rin kahit 2 days na soft pa rin sya. Then yesterday, gumawa ako ulit APF naman ginawa ko since yun na lang available flour ko. Kala ko po kaya hindi ko na-achieve yung sobrang soft na texture e baka sa pag kaka-knead ko.. thank you po ulit!

I used bread flour only every time I make pandesal. It has a better taste and texture compare to all purpose flour. My opinion only through experiments and experience.

Mas mataas kc sa protien ang AP at ang BF mataas sa gluten kaya Medyo light ung BF pag naluto.pero ung lasa pareho LNG..tama ba Ako sir kc d2 sa kuwait AP gamit ko kc mahirap din hanapin ang BF dito.

Sa nabasa ko naman, mas mataas daw ang protein content and gluten content ng bread flour compared sa APF, pero when I looked at the Nutrition Facts sa gilid ng packaging, same amount ng protein naman sila. Regardless, based sa results na ginawa namin, mas malambot talaga ang bread flour and mas dense ang APF. Ok lang po ang APF para sa ating home bakers, since pareho din lang ang lasa nila. Thanks for sharing this video. Kasi wala akong mabiling bread flour dito sa amin, kaya gumagamit ako ng self raising flour but iba ang texture at medyo hard yong pandesal.
I have never used a self rasing flour, but sa nabasa ko may baking powder daw sya na kasama. I am not sure if this affects the density and softness of pandesal. God bless!

Apf lang din lagi ko ginagamit, mas gamut kc ang apf kesa sa bread flour, pag gusto sobrang lambit nilalagyan ko lang ng bread enhancer..

Remember the best pandesal were made a long time ago when all flours were all APF. No such thing as bread flour. Ask the old bakers in the Philippines!

I have been searching about the difference of apf and bread flour. All I know is dapat lesser ang liquid when you use apf. I made ube cheese pandesal on my channel using apf and it turns well. I will try to use bread flour when making bread next time and see how it turns out. btw this is very informative especially for me na beginner. 😊 Thanks po!

I did use bread flour for my imperfectly perfect na Ube cheese pandesal.. I think the texture was better than the one I tasted na ginamitan ng all purpose flour..

Magandang araw po! Salamat sa kind words, makakarating kay kumander. About sa toaster, may videos po ako na nakapag bake ako ng gamit ay maliit na oven. Not sure lang po kung anong model ng oven nyo, but most likely it is doable, except king sibrang liit talaga ng oven then baka hindi pwede kasi baka masunog sya dahil msyadong malapit sa heating elements. The dough was very sticky when i transfer it on the silicone mat dusted with some flour on it. I knead it for 12 mins. And was not able to do window pane test as i’m totally a beginner. What will go wrong if i over knead it?
Magandang araw po! If the dough is too sticky, add a little bit more flour po. And don't worry about over kneading this, kasi kung manual kneading po parang mahirap ma over knead ang dough natin. God bless!
Pag nag mamasa po and it’s still sticky dust little bit ng flour but not too much ksi titigas ang bread po and go on po sa pag mamasa pra madevelop po ang gluten nya. Then check nyo po yung window pane nya. Pag di napo npupunit agad it’s good to go for proofing. If u think ba na over nyo po sa masa rest nyo na lng ng 10 min. muna.

I like the all purpose for pandesal :-) Kasi ang pandesal nilalagyan ng palaman like corned beef, minudo, etc. kaya its better na siksik ang pandesal. Bread flour is good for sweet bread like ensaymada, monay etc. Thank you for this video. :-)
