Antoinette's Kitchen: Episode 1 | Sunday Sauce with Meatballs & Sausage

    Sunday Sauce with Meatballs & Sausage Recipe:
    Sauce Ingredients:
    8 pork Italian sausages
    2 cans 28 oz of San Marzano crushed tomatoes
    1 can of 28 oz tomato puree
    1 can of 6oz tomato paste
    12 leaves of fresh basil
    1 cup of dry red wine
    4 tbsp of extra virgin olive oil
    1 medium size onion finely chopped
    4 cloves of fresh garlic finely chopped
    Salt and pepper to taste
    Sauce Preparation:
    Sauté sausage in a large pot of EVOO, garlic onion, tomato paste and salt/pepper to taste. Add all ingredients above to pot and then simmer the sauce for one hour in a covered pot.
    Meatball Ingredients:
    2 lbs of ground beef
    1 cup of seasoned Italian breadcrumbs
    1/2 cup of fresh parsley, finely chopped
    1/2 cup of grated Locatelli Romano cheese
    Salt and pepper to taste
    3 cloves of garlic, finely chopped
    1/4 cup of oinion powder (Yes! this is correct)
    2 tbsp of garlic powder
    2 eggs (1 egg per pound, 2 eggs total)
    Meatball Preparation:
    In a large bowl - add 2 eggs, lightly beaten,
    Add all ingredients above, gently mix and combined,
    Wet the palm of your hands with warm water using a small bowl. This will process will keep the meatballs moist. Start rolling meatballs, roll each meatball the same desired sized. This should make about 25-30 meatballs. Place the meatballs into the sauce as it simmers and cook for 1 hour in a partial covered pot.

    OH MY GOSH !!!! I made your sauce & meatballs today, and all I can say is they are both totally incredibly delicious and SO EASY TO MAKE. I even made sure I got the cheese you recommended. This will be my "GO TO" recipe from now on! Nothing else even compares to this sauce. And the meatballs were so tender and delicious they melted in your mouth. Absolutely the BEST meatballs I've ever eaten !!! Thank you SO MUCH! I could give you a big hug and kiss~~~!!!

    Am not one that eats meatballs, but after watch your show, I was so impressed with your passion and love for cooking and keeping the family tradition going. I am not Italian but everyone loves italian food! I watched all the way through and now need to purchase the ingredients.     The 2 cans of crushes tomatoes are The San Marzano that I hand crushed and added basil, the additional can of crushed tomatoes, I add after the pork and sausage are added and you can also use one 28 oz can of puree, its your choice. Yes, I did say crushed tomatoes of which I used in this recipe but at times I alternate. Thank you for noticing this, but I can assure you , the taste and flavor will be there no matter what you feel to use.. Thank you and enjoy the recipe...

    I was taught the same way with the taste haven't gotten me sick, that was nice to see, How I grew up with it being done. I sometimes change it up for my husband as he's more fussy lol I do both someone's I've fried them because my younger kids love to have the crispy outside, so sometimes for them I will do a quick fry, most times I also don't like to fry mine I learned to do it similar, not frying it. Loved watching ❤😋🤤

    Good morning Ms. Antoinette. I'm writing to tell you these are literally the BEST meatballs I have ever had. I grew up in NYC and went online to look for a good meatball recipe since the one I was using was less than spectacular.!! And you're so right, frying them takes away so much of the flavor! This is better than anything I've ever used before and the added plus of you listing the sauce ingredients was like winning the Lottery. (I was using a sauce recipe that never really hit like this one) My family now wants me to make this every Sunday, so we're starting this Sunday for Fathers Day.     My ex mother in law family from Italy. She would make the best sauce that cooked all day. Like your it had meat balls, Italian sausage, and other meats. Some meat balls would have a boiled egg inside. But it was sweet. She added sugar. It was delish but maybe a little too sweet for me. I’m going to give your recipe a try. Thank you.     We are from Naples also. We don’t put onion or garlic powder. Everything else the same. Sometimes i use Hunts sauce instead of crushed. I love Hunts.

    How much pork and crushed tomatoes? They are not even listed in the ingredients list. Is there somewhere I can find the full recipe?

The written instructions mention "1 medium size onion finely chopped", but the video doesn't show that step. Additionally, the video mention "fresh pork ribs" that go in the sauce, but the written recipe only mentions Italian sausage. Could you clarify if the written recipe needs to be updated to match the video? Thanks!

      @@auntie4life sorry for the confusion! Sometimes I will create a dish a couple different ways and the camera captures it. Always follow the recipe 🧑‍🍳 Pork neck bones are optional. Sometimes I include, sometimes I don’t. If you follow the recipe, it will be great! Thanks

    Great recipe but quick question, when you are making a sauce after you let the pork in the sausage simmer, do you take it out before you add the tomatoes or you leave it in there for this for the whole time?

    WE always Put them in the Sauce Raw. As long as they come to temperature they are fine. over 100 years and nobody has ever gotten sick.

    Antoinette I couldn’t find tomato purée or the locatelli cheese I had to use an extra can of San Marzano tomatoes and Pecorino Romano cheese I hope it’s ok can wait to start cooking

    I just found you through TikTok and can't wait to make this. I've never made anything with pork neck bones. Do you discard them afterwards or do they have enough meat on them to eat?

    Hi! I’m making this right now, and noticed that the recipe calls for a chopped onion in the sauce, but it’s not in the video. Is that a typo? Also, is it 2 28-ounce cans of crushed tomatoes in puree and a little tomato paste? The recipe calls for 2 28 ounce cans of crushed tomatoes and one 28 ounce can of puree, so it looks like a lot more tomatoes than in the video. Can you please clarify? Thank you!!

    FYI, you are missing the parsley in the written sauce ingredients and the onion powder from the meatball recipe.

      Katie, Thank you for noticing in my ingredients for meatballs, it said oil powder instead of onion powder. I corrected the typo error. As far as the parsley I do not put it into the sauce. ENJOY the recipes, your family will love it!!

      When rolling the meatballs dip your palm into a bowl of warm water, every 3 meatballs. That is what keep the meatballs soft and tender. My family loves the meatballs that way....No one likes tough feeling and tasting meatballs. I love to share these little hints that my father taught me..

      Thank you for the comment! You can add 8 pork neck bones to the list right after sausage. I don’t always use pork neck bones however they do add so much flavor. Add the pork neck bones in at the same time as the sausage. That’s it, enjoy!

    Hi! Thank you for sharing ❤ reminds me of my late Nanny’s recipe who is also Neapolitan.
    My question for you , do you let the sauce simmer covered for an hour and then add meatballs and simmer for an additional hour partially covered? Or is it all together an hour total

      Thank you too! Once the sauce comes to a simmer you drop in the raw meatballs and stir. Cool for 1 hour with the lid partially covered. That’s it! Thanks 💕 Enjoy

      Your welcome! Bring the sauce to a low simmer, then drop in the meatballs and cook for 60-90 minutes. Then you’re done. Enjoy!

      I just put my meatballs in the pot for the first time, had a conniption fit went back and read it. It’s one egg per pound of ground beef so for this recipe calls for 2 pounds of beef it’s two eggs. if it’s ruined I’m gonna be mad.😢

    What pork did you add other than sausages? Looks like country ribs, my aunt put in pork neck bones.

    I am looking for the recipe to print to cook by.. also how long are you cooking the pork . To fall apart tender? I was just wondering how the meatballs could withstand hours of cooking if that was the case
