John Locatelli very simple! Cook 1 whole yellow onion, lots of garlic, and ginger in oil. Add 6 cups of water and then about 1 or 2 cups of rice and let that cook until the rice is soft. I don’t eat meat so all I add after the rice cooks is more ginger, and once I put it into my separate bowl I’ll put a loooottt of black pepper, green onions, and squeeze lemon juice on top:)
My favourite rice porridge is Chinese congee with ginger/scallion/fish and fresh fried donut for dipping. Better than chicken noodle when you're feeling under the weather.
