I tried this recipe today because the Dunn’s river paste I bought was too hot but this was perfect and I could even eat it on its own without blowing my head off! I’m going to cook sweet potato and butternut squash curry now with it , we’ll done Raquel!
Well done my friend. I use apple cider vinegar, de-seed the scotchies, dark soy sauce instead of salt, molasses instead of brown sugar and browning, olive or avocado oil, basil and a touch of tomato paste personally.. but to each their own. It goes on all meats!

Hello I watched your video and it looked delicious, I want to know did you make the wet jerk seasoning or you bought it like that, I looked up wet jerk seasoning and google is showing the seasoning “dried” or “ dry rub” . @@Itonwise You mean the making of the browning or the amount used? Browning is sold in almost all supermarkets, add just enough to the marinade to acquire that Jerk Color
The pimento peppers are totally optional, they are not traditionally part of the Jerk marinade. The scotch bonnets are the essential ingredient, along with the pimento berries or powder and thyme

@racsfood or for the group…are all these ingredients native or found growing wild in Jamaica? I believe I understand jerk originated from African cooking methods adapted in Jamaica. Great flavors! So many ingredients! Had me wondering what the process looked like in colonial/slavery era and if all that stuff grows there or if it was brought to Jamaica.
How tf are you supposed to make this if none of the stores around me have scotch bonnet peppers and pimento seeds? What are alternatives to these that makes it still taste pretty much the same?

It freezes very well, the vinegar that was added serve as a preservative, so if it’s refrigerated… it should last for a pretty long time

Hi Wyteman, add as much scotch bonnet peppers as you like, the pimento peppers could definitely be excluded, wouldn’t affect the recipe at all !

A lot of jerk recipes use orange juice and soy sauce, what do you think it adds?
The soy sauce is a substitute for the browning and the orange juice is a substitute for the lime juice.

Is the browning just food color? I that browning necessary? I can't find where or what that browning is.
Soy sauce could be a substitute but the browning could be excluded.
I wondered about this too but I used the dark Modena vinegar for this which is lovely though expensive!

Other kind of peppers could be use, but the pimento seeds really gives it that greatness…. 🤔
