How to make the GREATEST Uzbek Palov (Pilaf, Plov, Osh) [HD] Extended Version

  • Palov to Uzbek is like pasta to Italians. Palov is Uzbekistan's main coarse, mainly served to large gatherings of guests, such as a wedding. Palov is the signature dish of Uzbekistan and is considered to be one of the most delicious dishes in the world!
    Let's Dive Into the Recipe!
    Ingredients:
    Carrots: 5-6, peeled and sliced
    Round Rice: 4 cups
    Vegetable Oil: 1.5 cups
    Onion: 1 large, finely chopped
    Meat (Lamb/Beef): 2kg, cut into 3cm cubes
    Spices: 1 teaspoon each of Cumin (Zira), Black Pepper, and Paprika
    Salt: 1.5 tablespoons
    Water: Clean and sufficient for cooking
    Garlic: 3 bulbs
    Hot Peppers: 2-3 (optional), whole
    Cooking Instructions:
    Prep Work:
    Heat the oil in a large pot until it's smoking hot.
    Brown the meat cubes until golden.
    Add the chopped onions, frying until they turn a golden-red color.
    Mix in the carrots and cook until they soften.
    Building the Plov:
    Pour enough water to cover the meat.
    Place garlic bulbs and hot peppers (if using) on top, and simmer for 10-15 minutes.
    Remove garlic and peppers, then rinse the rice and layer it over the meat and vegetables.
    Add water again to a specific level: if you insert a spatula at a 30-degree angle, the water should reach nearly half its length.
    Stir the rice gently until the water evaporates. Then, form a dome with the rice, making a hole in the center.
    Return the garlic and peppers to the pot, placing them on top of the rice.
    Final Touches:
    Seal the pot tightly and lower the heat to the minimum.
    Allow the Plov to cook undisturbed for 40 minutes.
    Uncover, carefully flip the top layer of rice to the bottom, cover again, and let it sit for an additional 10 minutes.

    I made this recipe and feel like a whole new cooking world has opened up to me. This is absolutely delicious. I even had the sides of onions and tomatoes. I'm truly blown away with how good this recipe turned out. Thank you for your step by step instructions. Love this recipe.

      @@TenleeLee It truly will depend on the pot you use. I follow the way it's done in the recipe and just eyeball it. I've made this recipe several times over the past two years and I never measure, but it comes out right every time.

    You have given me a new way to make this dish. My father in law is from Tashkent. He uses tomato paste about 3 Tbls. You have a greater "respect for your rice " than I do. I will have to float the rice on top and be gentle with it. Thank you for great recipes.

    Best plov video I found so far. I've been trying to emulate my mom's plov for years. Word of caution though: too much oil. I added less oil, and it was still SOAKED in oil. A delicious plov doesn't need too much oil. Other than that, great flavor and rice wasn't under or overdone. Great job!

      poplvk it depends of rice. Different rice absorb different amount of oil.

      It also depends on the side dishes.
      If you are going to use salad, like in the video, then maybe you are right.
      For my part, I always use pickled cucumbers as a side dish. And with sour, acidic, pickles, the oil goes perfectly. Wouldn't have it any other way.

      Same here, I tried this recipe and the flavours were great but it was too oily even though I already added less than asked for. Next time I would add way less.

    I've made plov before using other recipes (Russian) and the result was always poor. This time the result was unbelievable. To die for! The video is easy to follow. It is time consuming to make plov but the results make it well worth while. This will be served up at home time and time again. Thanks for the video and keep them coming.

    Its dope recipe to get used to, it has everything of nutrients you need and nothing you don't need. Actually eating Plov means being healthy and no matter how much you eat of it (you can't eat much because its pretty nourishing) as long as you do some sports, you never become overweighted due to fast metabolism and can't get overdose of salt or other components as if you buy anything from shops.
    Compare anything average American eats during a day and Plov, that's enough to see the difference in healthy food.
    I was just raised with this recipe as my mother used to cook it quite often in Russia when I was a kid. Amazing

    Hello, it looks good and I believe this is the way you make it, best measurement that I have learnt is an inch and a half on your little finger over the rice, cover and let it cook on slow fire, check periodically so that the rice don't get scorched at the bottom, the moment water done , put your pot in the oven and let is fluff itself for 30 to 25 minutes into a preheated oven at 325 degree F, it is comes out fluffy, grain to grain. Never sticky..

      Basmati rice is very fragile so sometimes they get break and rice become mashy

      No sorry, I ate this at a restaurant in Kontula area of Helsinki . Sorry it doesn't taste good. Yalhni polau is much much better.

    The plov truly is amazing! However the proportion of rice to meat is off. Instead of 4 cups of rice, it’s should be 6. Also if you’re making it with brown rice like I did, increase the time of slow simmering to about 1.5 hours. And of course add more water. Thank you for the recipe! 🥰
