Pavlova is a soft and light cake created in New Zealand by a pastry chef in honor of Russian ballerina Anna Pavlova. The secret to a perfect Pavlova is the baking of the meringue, which must be crispy on the outside and soft on the inside. Then whipped cream and delicious berries complete the work.
