How to make Chicken Bouillon stock Cubes better than Maggi cubes - NO MSG low sodium collagen-rich

  • They’re called stock or bouillon cubes because they’re derived from the stock of the meat. This recipe offers you healthier alternatives in a stock cube, due to the simple fact that, it is collagen rich, low sodium, no msg, and has all natural umami rich ingredients. Each cube is potent enough to boost flavors in a big pot of savory delightful dishes.

    INGREDIENTS:
    * 5 lbs combo of chicken feet and bones ( excellent substitute is beef bones with tendon for collagen extraction)
    * 6 celery sticks chopped (bake half with chicken, and other half in stock pot with baked chicken)
    * 6 carrots chopped (bake half with chicken, and other half in stock pot with baked chicken)
    * 2 large onions chopped (bake half with chicken, and other half in stock pot with baked chicken)
    * 1 tbsp sprinkled on above ingredients before baking/roasting)
    * 3 cloves garlic
    * 3 1/8 inch slices of ginger
    * juice of 1/2 a lemon
    * 1 gallon of water
    * 2 cups of kosher salt
    * 2 tbsp sugar
    * 1 tbsp marmite (yeast extract)
    * 1 tsp turmeric

    AS someone who makes his own stocks and bouillon I was usually disappointed with most online recipes as all they did was mix veggies and then froze it. Bouillon shouldn't require a freezer... So I was very, very, very happy to find this recipe and will definitely try it, thank you so much. The main difference I learned is adding salt and spices at the end. Normally I made stock with all spices and salt and then just boiled it down until most water evaporated, then spread it over waxed paper and oven-dried it until dry. Then the texture was moldable like playdoh so I made little balls from it and can be stored anywhere really as it's already dry. So thank you again for this great recipe.

      @@starfoxandstellar9917 it's in the comment already. Make a super strong stock, like way too much salt, spices that you like in your stock and all that and boil your veggies in it. Let it cool down in fridge after, take the fats away when they solidify and boil the stock until most of the water evaporates. Then put it into an oven on some baking paper or silicon paper so it doesn' stick (don't use aluminum foil, that sticks) and "bake" at 150 - 180 degrees F (80 C) with a slightly open oven and the fan turned on for a few hours for the rest of the water to evaporate. Then let it cool down and it should be moldable like playdoh. This takes a bit longer to melt when used but it will dissolve completely.

    This looks legit, Onuawaa. I need to come pick mine. I once had this patient who always drank broth at dinner time. It was made with chicken feet, celery, carrot, onions and garlic. I guess that was her way of loading up on her collagen and all the goodness the broth had to offer. I don’t know why but watching this just made me think of her!!! Thanks so much for sharing ❤️❤️❤️

    This is Magnificient sis. Saw the chicken feet and i smiled, my second son hates to see it in my pot of food🤣 looks amazing after 3 hrs cooking. Flavorful and awesomely cooked and concentrated. Wow imagine that after adding kosher salt. Homemade is better sis wooow. Sliced to perfection. Welldone dearest❤️❤️❤️🙌

    Wow! Just wow! This is by far the best homemade D.I Y tutorial yet. Oh ! The homemade sardines as well 😋...Hmm I can't even choose because everything, I mean absolutely, every recipe of yours sincerely brings joy to my heart.     I appreciate seeing this, because I've been watching a few different videos of African traditional cooking, and for some reason, those bouillon cubes were always thrown in. I prefer an all natural diet, with no MSG or anything similar, and it was kind of offensive to me - I get this feeling that the corporations kind of invaded Africa and sold them things they didn't need. I have enough of that kind of thing in the USA already. So it's great to see the natural ingredients being used instead.

      MSG is an extremely common naturally occurring substance. It's in cheese, meat, tomatoes and a shit tonne of other foods. The powder is the same chemical that has simply been extracted from seaweed.

      I disagree with what Casper said. Most of the MSG we get is synthetic and there are many people who have severe reactions to it. I agree with you that the corporations have sold Africans on a lot of these ingredients which are now considered staples to African cooking but I’m sure are linked to much of the health problems we see in African cities ie high blood pressure, diabetes, etc. I found this recipe trying to find an alternate to Maggi cubes which are the secret to Senegalese omelette but I can’t be eating that crap on the reg.

    I really love this idea. I think that using the chicken feet is so genius. For those of you who don't know where to find yeast extract, it can often be found at an international store. apparently ppl in australia spread it on toast 🍞. I found it easily in mine. This had to be better than them maggi cubes

    Great video and I'm definitely going to try this. There is just one thing in here that bothers me. This is DEFINITELY not low sodium. Kosher salt has the same amount of sodium as table salt. You are sort of correct but not really. Kosher salt packs less into the same volume as table salt because the grains are larger. So measuring a volume (tablespoon, cup, etc.) of salt will give you more sodium using table salt, but if you measure 1 gram of each you will have the same amount.
    As a note, diamond crystal kosher salt is the "standard" salt in recipes because the grains of salt are all the same size so you get a consistent amount of sodium. Diamond simply refers to the shape of the salt crystal, vs flake salt

    Great recipe. I do find it strange though when MSG is referred to as non-naturally occurring substance, when it’s found in many, many nutritionally beneficial foods such as tomatoes and seaweed.

      They actually sneak it into ingredients under “natural favoring” “yeast extract” among many others.
      Like many things, a substance in its natural state within a whole food also containing the stuff required to properly process it, when it is concentrated and over used without it’s natural counterparts it can become harmful.

    that stock right there by itself can cure everything from heartbreak to the common cold! great video. if you are having a hard time getting the rest of the bits off the sheet pans try setting the pans over 2 stove burners on low and scraping them, this has worked well for my wife and i.neck bones and feet are soooo underused (at least here in the US) im glad to see you using them as well. Very good video!

    Excellent tutorial Thank You!!! I feel inspired to make some of that. I always use Redmond salt in my house. Has anyone tried making this recipe with salt other than the kosher salt she uses?
