      Hi Mary, have you ever cooked up a recipe of leafy greens such as cauliflower greens "potlikker soup" with corn dodgers in the soup using your chicken broth or chicken boullion powder in any of your videos?
      One of my most cherished childhood memories is playing with my neighborhood dearest friend and her great-grandmother calling us in to eat a bowl of 'potlikker soup' with corn dodgers!
      I will never forget Miss Nanny's delicious bowl of broccoli greens cooked with pieces of fried bacon in chicken broth and throwing in meatball size corn dodgers in with her greens cooking in chicken broth.
      I loved sitting in her lovely kitchen with my best friend, watching her granny cook and listening to her rich childhood stories and handing down her wise advise that I use today!
      They were the best years of my childhood life.

    Hello, George Martini, I am a retired chef of 36 years (4 years) I am very knowledgeable about food, but with that said I want to thank you for your videos because I have learned so much about canning and dehydrating foods which I want to do in retirement. I do make my own bone broths and stock. But from your video, I learned to dehydrate it. I will be checking out videos on making dehydrated beef broths and stock. No matter how knowledgeable you are you never stop learning. I like the way you teach in your videos.

    If someone doesn’t have oxygen Absorbers, I have made makeshift “teabags” with a mixture of coarse salt and rice. It doesn’t absorb the O2, but it does absorb any moisture that might be left in the jar...even due to humidity in the air.

      This is far more old school and indepth than what I learned in home ec. I'm 53, so we still had it, thankfully, but it was much more basic. We did learn to make bread, which is a wonderful skill to have. I was blessed to have a mother that cooked and baked from scratch too, so she taught me tons. There's really so much to learn. When someone is helping me in the kitchen that has only basic cooking skills there are so many tips to give them. Sheer basics like how to measure out flour. Bread isn't fussy, there's so much adjusting depending on the time of year, humidity and heat levels, so once you know what your various doughs should feel, then approx. measuring is fine. But cookies, cakes and such are fussy and need precise measuring. Cooking is super easy and I rarely measure, and tend to change it up as I feel.

For me, I happen to WANT very in-depth information, that way, when I'm halfway through the process, I won't be stumbling around trying to figure out all of the rest of what I need to do. I'll take a longer, in-depth video any day, ESPECIALLY when when it's Mary teaching. Mary doesn't miss a beat. 😃

    For jars you plan to open often, I prefer to use silica gel instead of oxygen absorbers because oxygen absorbers don’t last if they keep getting exposed to oxygen. Christa at Prepsteaders has a good video of how to make silica gel packs. I prefer to use tea bags, but she uses coffee filters.

    Hi Miss Mary... I just wanted to take a minute to message you in gratitude. I am a 34 year old single mother who has never been especially successful in the kitchen- a gross understatement, really! I have an autoimmune disorder and I am overweight, and I recently decided I wanted to commit to 60 days of Keto in an effort to get my health under control. Finding your channel has been a godsend... your content isn't just relevant, you present it in such an easy to understand way that for the first time I can remember, I don't feel overwhelmed in taking on a recipe. As someone who barely has the kitchen staples, I especially appreciate that you give options to viewers who may not have all the extras available to them.
    I subscribed, of course, and really look forward to your future videos. Thank you again for sharing your wealth of knowledge and experience with us. :)

    As always, SO useful!!! I love a cup of broth when it's cold, and as you point out, it is so handy when cooking dozens of things -- I used to freeze my homemade stock/broth, but it had never occurred to me that I could dehydrate it and keep it in my fridge or even my pantry. This is great, thanks so much!

    I like to dehydrate lots or organic vegetables and store in a jar. I sent some to my mother as vegetable soup mix but I told her to add it to broth. I just didn’t want to add bouillon because there are so many additives because she has so many allergies. Now I can add dehydrated bone broth to the vegetables and she can use a small jar or packet to make her soup!

      @@laurx39 I'm going to try this. I had the same problem for years (MSG is the main culprit). I'd save drippings from beef or chicken and keep in the freezer, topping up my frozen drippings, so I could make a decently rich soup. Beef barley soup (my favourite and the easiest too), really needs a rich broth. These days, they finally have some natural alternatives that don't taste like crap. Distilling all this turkey bone broth would be wonderful though. What I've been doing w/ my frozen stock is to just let it soften slightly on the counter and it's very easy to chizel out the bit of stock I need for whatever I'm cooking. Hope those tips help until you get to dehydrating. If you're like me, you've got so many other things to make and do, it will take awhile to incorporate yet another chore into your repetoire.

    With the parchment paper. You can also use it as a type of funnel to tip the dried broth into the blender. Just tip all of the dried broth onto the one sheet then pick up the sides as though to fold in half. Lift and pour into the blender.

    Thank you Mary, this was very educational and I will be trying it for sure. As I told you before your bone broth was a big part of my healing and I keep cooking with it every time I can. Because we are doing everything from scratch we had to purchase another freezer to store our homemade food. One of my little freezer is half filled with all kind of bone broth, it does take a lot of room. This will surely save on space. This year for the first time in many many years, since I was sick, but by the Grace of God I am healed, I have made a garden. We will have tomatoes, peppers, broccoli cucumbers radishes green onions and many kind of lettuce, kale, chard, and spinach so I will be blanching and freezing a lot of food for the winter, I will need room. You are always on point with your video, sweet Mary. Thank you so much again. I love you in Christ Jesus. May He protect you and yours and keep you safe until He returns... and, let’s rejoice and keep occupied because He is at the door! It will be glorious!

    THAT explains it!! I couldn’t figure out why sometimes, even though I was using the same amount of my powders I had varying degrees of richness and flavors!!
    This Thanksgiving, I took Cornish hen carcasses, turkey carcasses, chicken carcasses, a goose carcass and duck carcasses for the broth. I labeled it “Fowl”
    It is very flavorful and rich. I also find that there was plenty of seasoning and herbs already, so I don’t have to add anymore when I use it for a mug of bone broth or 3-4 Tablespoons per 6-8 quarts of soups and stews.

    Hi Mary, I mentioned the absorbers in another comment but people should know they are very under rated and very inexpensive for anyone who makes or keeps food for any extended period of time. The reason they're so good in food like that bullion is it takes both water and oxygen for bacteria, mold ect to grow. So even if there's some moisture left, no oxygen. It's also great because, say you bought bulk bag of flower or whatever to put into jars, cans whatever, if any type of weevil, bug ect got in there they won't survive or thrive because there's no oxygen.

    • @MarysNest
      @MarysNest  4 года назад +1

      Thanks for sharing. Just make sure that your bouillon is VERY dry - less than 10% moisture - if you store it with oxygen absorbers outside of the refrigerator. Love, Mary

    I love how you can control the sodium intake with this method. Add a little salt for flavor and preservative properties but not so much that your blood pressure explodes. Thanks for the upload. You have a wonderfully soothing voice.

    I canned some chicken thighs I found on sale. One of the jars lost its seal and I decided to dehydrate the meat and vacuum seal it. There I was with the wonderful broth. Freezing was an option, but I have some beef coming soon and hated to take up any freezer space. So I typed in your name and started scrolling. Guess what popped up. I've never made my own bouillon powder before and thought this was the perfect time to try. Far be it from me to leave well enough alone. All my dehydrator trays but one were full and running. What to do? Reducing broth to a glaze was something I had done on a carb free diet, why not. I reduced the chicken broth down til it was so thick I smeared it on the fruit roll up tray. In hindsight (it stuck and had to be scraped off) I should have spread it on the shiny side of a piece of freezer paper maybe; I'll try that next time. It didn't make a powder, but is dehydrated all the same. I'll put it in the jar with the chicken and vacuum pack it. If I don't nibble away all the dried chicken pieces. Chicken jerky 🙂

    Love your videos. With taking the fat off...I froze the broth in a Ziploc bag standing upright then used a fine sharp knife and peeled the layer of fat that settled on top as it froze. I bagged it warm not hot. Right now I'm thawing it to reduce it down some more and will dehydrate it this evening

    I just today promised my friend to make him some home made chicken and noodle soup with some veges (not peas, he can't stand peas) the next time I visit him. It would be great if I can make the slivers for easier transport! I have been saving chicken bones in my freezer for a few months now to make stock. Your video about scrap gardening gave me the idea to freeze scraps to make stock. I wasn't looking forward to making stock at his place since his AC hasn't been installed yet, and I know I make it mostly in winter just for the extra heat and humidity... NOT something I want in Missouri summers!
    I really appreciate your channel. It's like a modern version of the Towndends channel, in some ways. At least, the cooking episodes on that channel.
    IF you are interested, he has one episode to make home-made potted meat, the historical way. Given you also like to preserve food, you might find it interesting. I think if you translated it to a modern kitchen, it would last even longer. (It doesn't resemble the canned stuff from stores, it actually looks like meat, not cat food)

    Hi Mary, I just stumbled onto your Channel when I wanted to know if I can dehydrate Chicken / Beef base. I want to try my hand at those Soup in a Jar kits and didn’t want to put the base in there to go rancid. This method of dehydrating my homemade Stock / Bone Broth is a great idea!
    I really enjoyed the depth, tips and explanations you go into. I have a dehydrator and Love playing with it but I’m new at it so I’m going to look up all of your other videos and let you teach me your tips! I’m disabled so I can’t always stand to make elaborate meals for myself and Soup in a Jar and dehydrating my bone broth seems like a win to me. It’s also better for me as my Son has a terrible diet that I avoid at all costs, and this will help with that as well as take less room in my freezer / pantry…Thanks! Keep up the good work! It’s appreciated!

    I recently got turned onto a "Pump-N-Seal". I just got mine. I've been resealing all my jars. So easy. I purchased through their website. No electricity needed. I guess they had an infomercial in the old days. I never saw it.

    This was so helpful, Mary. My kids each brought me a case of organic chicken broth in case I got sick. One case reads ‘best by August 17, 2020.’ No way will I use it all by then but now I can dehydrate and save it! Had thought of dehydrating broth before but unsure of quantity for each shelf and my homemade is too precious for experimentation. Question: do you think oxygen absorbers are that much better than the moisture retardant pkgs here in Texas? They are cheaper but I have both. Perhaps the oxygen absorbers keep product from getting stale more than the silica? Really great vid.

    • @MarysNest
      @MarysNest  4 года назад +2

      Hi Joy, great question I think the oxygen absorbers are good if you’re going to do a long-term seal and not keep opening it. Otherwise I’ve learned from others that the silica gel packs work the best if you’re going to be opening and closing the jar a lot. I think overall using the silica gel packs are probably a good idea. Love, Mary❤️🤗❤️

    For another makeshift funnel, I cut the top off a 2-liter pop bottle. It works well to pour things into bottles with narrower necks too.

    I saw on another video on how to make clotted cream, a tip about drying stuff in the oven. By preheating the oven to a much higher temperature, and then turning it of before putting in the stuff you are drying, you can use the residual heat in the oven over the next 8 hours to do the job. So you don't need to keep the oven on for so long, and you could do it overnight without having to worry about it. Although I'm not sure how well this would work with drying broth since it might be more sensitive to the temperature and/or timing. Might need some experimenting to find the right starting temp.

    Hi Mary, I’ve been binge watching your channel all day. Do you think a casserole dish without parchment paper suffice if dehydrating in the oven? I’m not sure if the final product would be difficult to remove and grind.
