Urgent question (smoking a turkey tomorrow) If you dry brine it would you still do the slow temp start or would you jump right into the constant temperature?
The slow temp starting would give you that smokey flavor before the rise in the temp.

I been in US for 10 years. I made 10 turkeys trying to find the best recipe in internet; the 2 times I try this recipe, according to all my friends and family is been the best by far. Side note: I don't have a smoker; I used a round bbq grill putting the wood in one side and the turkey in the other side. It works very well. Thank you Aaron to share it.
Aaron, you got to check out Bradley at Chuds BBQ. He is in Austin too. Sadly I’m in San Diego and can only dream of perfect bbq. I do enjoy tri tip on my trusty Weber kettle though. Cheers.

I made this turkey, with the exception of a wet brine for 1 day and 12 hour dry brine uncovered in the refrigerator, and it was spectacular. I won a contest with it and it will be my go to. I’ve made and been in turkey contests fro years, this one is a winner!
