That old man in the end managed to disrespect the most disrespectful man. He managed to stop his own heart thus stopping the fight from properly ending, and since Yujiro didn't win but neither did he loose, the win went to the old man as he stopped the fight on his own terms. You can tell Yujiro was fuming after finding this out but as well respected the old man for playing such a trick.
No, it's basically stated that Hanma won that fight. The old man admits to knowing he would have died if he took that punch, so he stopped his heart to prevent himself from being killed for real.
It's pretty much the only way he could have forfeited the fight. Sure, if you want to say he lost the battle but won the war, you may have a point. But Hanma 100% came out the Victor if his opponent has to 10 count himself to avoid dying. If I lay down on the mat of an MMA match until the 10 count is up, because I don't want my face smashed in, I still lose.

To be fair, the old man didn't just came back to life. He was getting beaten so hard by Yujitto that he literally willed himself to temporary die to end the fight. In the anime and manga Yujiro is upset and bored because he is the strongest thing to ever live. He is actually almost depressed about it when he explains that he rushed himself to the top of the world. He has no one that can come close to him, except Baki later in the story.
