- Hidden in the streets of Bari, Italy is a small alley where a dozen grannies make fresh pasta by hand every day. They have been there for decades, carrying forward a tradition passed down over generations.
Today, Via Arco Basso, the alley where they live and work, has become a rite of passage for tourists and locals looking for great pasta and a breath of authenticity. One of the grannies, Nunzia Caputo, shows us how she makes Bari's most emblematic pasta shape: orecchiette with semolina flour.

it's a two ingredient dough kneaded by hand, it would be pretty weird to measure it when you make it routinely.

I cannot imagine growing up in a neighborhood where grandmothers are just outside making pasta in the street. Amazing.

Here in canada we got Ukranian desendants that make pierogies in church groups and sell them. Some where some how a grandmas making dough for with their friends

My grandma used to be a total pro at making orecchiette (she was from Basilicata, just next to Puglia) and she tried to teach me but believe me and believe Claudia when we tell you it's frickin hard to make those little delicious bastards. You either make them so often that you become a pro yourself or you give up and buy them at your local pasta shop.

They're such pros at it, they don't even have to look at what they're doing
When you practice a simple and manual task, after a while it comes less down to sight, and more down to the subtleties you feel at the tips of your fingers. At such a high level of pasta making, you know exactly how it feels to get it perfect, and you no longer rely on your eyes. You can feel that she's done it her entire life.

I've crossed this lady two weeks ago in Bari. The most astonishing thing is you see her (and many others ladies) doing the pasta and in the next corner you eat it in a restaurant! Local and circular economy!

That’s the only thing that kind of bugged me and made me sad. Like I’m glad she’s happy and enjoys her life, but sad that she wanted to study and they were like no, make pasta, and she just got married, had kids and grandkids 🙁

I mean, they are sitting far away from each other.
It was shooting during summer time, wearing mask was not compulsory coz high temperatures keep virus "weak" and saliva evaporating in less than few seconds.

I love this! Their interaction is like watching an aunt teach their niece a family tradition. Claudia always seems to connect with whoever she is interviewing.
Sono romagnolo.. una volta mia madre andò in Puglia e mi portò un sacchetto di orecchiette originali baresi con peperoncino. Le ho fatte con un sugo tipico romagnolo fatto con pomodoro, olio d'oliva e scalogna.. Ragazzi.. io me lo ricordo ancora.. Ho unito l'Italia in un piatto semplice che dire salutare e gustoso significa sminuirlo... una BOMBA!!! Le cose semplici ragazzi, le cose semplici! Alla fine la tristezza è semplicemente la morte lenta delle piccole cose nel nostro cuore. Un abbraccio al mio paese.

I love watching elderly people make food, it's just something about the way she was able to hold a perfect conversation, while also continuing to make the pasta without changing pace. I used to feel like a bother when I'd be in the kitchen watching my great grandma, but one day she told me that she was happier when I was asking questions than when I just watched because she wanted me to learn the traditions of our southern roots in cooking so I could pass them on to my children and so on. To this day, I feel so humbled when I'm in the kitchen with someone's grandma because I feel like they have so much knowledge and culture just waiting to be graced upon some lucky grandchild. Elderly women in general can be so wholesome, but I feel like the elderly Italian women really take the cake. This was like watching an interaction between Claudia and her own grandma. Absolutely beautiful video. Bellissimo!

Bari is a wonderful city... it’s Italy’s gem on the Adriatic. I’ve been there and regret not staying for longer. It’s absolutely beautiful.

I agree,I only watched the video( first time) because of Claudia .. so sincere and natural..
Amazing how easy it looks, roll a tube, cut with knife then pull back on flattened blade. Unless you try it you’ll never understand how challenging it is to make them consistent in size, thickness and shape. If you don’t get the shape correct then the flavor of the final product will be all over the place. And the dough, as simple as the ingredients seem to be it takes time to know the correct feel. The ingredients are important but remember, give two people some paint and a brush; you get back a painted fence from one and maybe a work of art from the other.

absolutely beautiful, this is rare talent before our very eyes. Decades of skill its truly amazing to see something like this. I worked in a michelin starred french restaurant and from there grew my appreciation for pasta making. I love Italian cuisine so to see this only makes me hope to one day have a trip to Italy.

I feel so lucky to have been to Puglia on holiday twice when I was a kid, such a beautiful area, and I still remember the incredible food!!
I'm from Bari, and I can say that our grandmothers are exactly like Nunzia. They are so kind and humble, I love how she does what she does with so much passion. They love to cook and my grandmother teached me how to do orecchiette with turnips and some cherry tomatoes. It's my favorite plate ever and it's original from Bari :D

I saw these nonni when I was in Bari earlier this year. I wish I'd stopped to talk to Nunzia, as she such an interesting nonna. Bellissima!
Loved the way Nonna didn't even look half the time when she was cutting and shaping the pasta. Shows that she is a real pro and is a master. Can hardly wait to visit.
