I imagine this sauce can be made with any nut I love Walnuts and I have them on hand but I bet you can do this with Pine nuts, Almonds, walnuts, pistachios, Macadamia nut.

It's hard to imagine Italian food without Tomatoes, this dish used them also, but Tomatoes comes from the Americas and wasn't available until they were brought back in the early 16th century. I would be interested in what they used in their pasta and other dishes before then.
Look up pasta alla genovese. Mostly onion cooked for a long time. it is amazing. Takes a long time to cook, makes the house smell like onion. But 💯% worth it.
I looked that up. They used garlic with olive oil (aglio e olio), or dairy (Alfredo), as well as other vegetables
(and meats). Funny, because the tomato, from Mexico, is absolutely SYNONYMOUS* with Italy, Italian culture,
and the Italian Economy. *(Corrected spelling... óòps.)
I believe the noodle came to Italy from Asia as well as the Tomato from the Americas. Crazy to think neither of these are truly Italian.

Sunflower seeds are often substituted for pine nuts and other nuts in recipes. I don't know if that works for your allergies, but a thought. I've used sunflower seeds successfully in recipes such as this. Hope it helps!

Are your calorie counts for all servings or just one? Your recipe says 817 calories. I hope that is for both servings...LOL Cheese is expensive but will try...looks good.

OMG!!! I AM so making this for dinner tonight! I turned myself off pesto years ago as I overdosed on it and from then on cannot stomach pine nuts! Using almonds, now that HAS to taste amazing!! I have to give you a humongous THANK YOU Albert! For about 20yrs I suffered an eating disorder and even though I had been "cured" (as the Dr put it) I have found it very hard to eat normally, if at all. I have been a Type 1 Diabetic since I was 7 (so 34yrs) and because I have found it so hard for so long to eat normally I have severe hypoglycaemia (low blood sugars), sometimes leading to seizures and unconsciousness and LOTS of trips to hospital! But since I found your channel and watched every single episode, you have given me confidence in overcoming my fear of eating, especially carbohydrates, which are very important in a Type 1 Diabetic diet! It's not that I don't like food, I LOVE food and I LOVE cooking, and your recipes are so easy to follow, easy to make, nutritious and, most importantly, DELICIOUS!! I still have a long way to go to have a "normal" eating regime, but because of your inspiration I am definitely on the right track! So thank you once again for giving me, first, the inspiration and excitement to head back into the kitchen and, second, the fact that I'm eating carbs again, I'm having a lot less very low blood sugars! I keep saying it, because it's true, YOU ARE AWESOME ALBERT! Hope you and your fam have a wonderful weekend and stay safe!

+1 for the Apollo Olive Oil. Their oil has the highest polyphenol content I have ever seen -- it's IMO too strong for salads, BUT if you make a crispy focaccia with sharp cheese and dried tomato and herbs, a drizzle of it completely transforms the result. It's also great drizzled on a spicy Neapolitan pizza.

I prepared this dish for dinner for my family of 3 and it was delicious. We kept some for lunch the following day and it was even tastier ! Albert can I check something with you: you recommend Golden Safran and I'm going to order from them. Their website doesn't say how long it can be kept after opening it. In your opinion and from your experience, how long ? This will help me decide what quantity to buy. Also, any tip to store it ? Thank you from Hong-Kong.

Hey there hmm ever since i was a little kid i had helped my grandmom and mom to make something on sanish called spanish jam, and actully doesnt have any thing with jam, but its more pickles vegetables, so i wanted to hear if you knew what the real name is, it is being used like if it was pickles you can eat to every you can eat it for casserole roast, casserole fried chicken oven roast roast and goose duck chicken and even in burgers, it's pickled diced vegetables that are onion tomatoes quash / zurcchinis aubergine/eggplants green and red bell oeppers some have garlic and chili in it to then salt pepper and vinegar, does this sounds like something you know, because always got told that it was spaniah jam hehe

Looks delicious! It is gratuitous that you didn't put any type of milk or cream in this recipe since Italians do not use any type of dairy in their dishes. I've had chefs in many countries tell me they use dairy when they cook "Italian" dishes".

Generally you buy them that way. Or drop them in boiling water for a minute or two till the paper shells loosen. Rub the paper shells away with a towel or paper. Rinse and toast!

This is a favorite of mine in the summer. You don't have to heat up the entire kitchen and the tomatoes are at their best.
Good recipe.
But the Pasta water is starchy. You don't thin the Pesto. You make it thicker.
Take us on a walking tour of your hometown. Visit a couple of the famous bakeries. Then make a simple churro or something. Great content!
