I always put a pinch or two of sugar in my tomato based sauce. It balances the acidity and bitterness without making it sweet. I loved❤❤when you said that and it helps me know why you’re one of my favorite chefs

No vodka either so I subbed a bit of chicken broth as you suggested. This is the third dish I’ve made from watching your videos - all winners and definitely repeats! We also loved your chicken parm recipe and the absolute bomb…the stuffed salmon. Thanks for makin’ it happen once again!

I used to get the ground sausage, but I started getting the Johnsonville hot Italian Link sausage and you sauté it and slice it up and put it in there like that so much better it’s like sautéed meatballs almost but better

I grow my own herbs and will use those, but for anyone not wanting to buy the herbs, garlic, etc., the Dei Fratelli brand of tomato products makes a pretty darn good canned all-purpose Italian sauce and it would work just fine here. This looks absolutely outstanding!!! Believe it or not my mom's friend made something like this over 20 yrs ago till this day I don't know the recipe..but now I'm thinking of it it's looks kinda similar of what I just saw .I make mine with heavy cream,,and at the end I put chives with a lil bit of cream cheese,and everything else this young man put...But Idk why I thought she had cream cheese in her recipe 😬but it still and is delicious.....But I most definitely gotta try this with mild and sweet sausage... This look amazing!! Bon appetit

Matt, you're so right about the sugar. It don't make the food sweet, the sugar is to balance the seasonings and to cut the acid from the tomato sauce
I be tryin to tell people this but I like my tomatoe sauce a little sweeter to balance out the salt and spiciness of my other ingredients

I always add touch of brown sugar, honey or molasses to tomato sauces. Not enough to make it sweet. So no mean words from me.
