Important Tips for Making Mochi Cookies:
1. Make sure to knead the butter into the mochi while it’s still hot, as it becomes difficult to combine once it cools.
2. Continuously stretch the mochi until it reaches a long, silky texture. This ensures it stays soft longer and doesn’t harden quickly. You can also use a dough hook to mix, which saves time and effort.
3. Always keep the mochi covered with plastic wrap to prevent it from drying out.
4. The best shelf life is 2 days at room temperature, or you can store it in the fridge for up to 1 week, but the mochi will gradually harden over time.
