      These are similar in theory to mochi, but the chewy part is thinner (snowskin), and they all usually have some kind of soft filling, a paste, custard, ice cream, or salted yolk. Some have meat in them, I've not had them though! Traditionally the outside layer is more commonly a pastry-like "crust."

    Brown sugar is just white sugar with molasses added! So the molasses center makes perfect sense

      Sugar is brown before the molasses is extracted, it is not added back in.

      ​@nyomicasey close, but white sugar is brown sugar with molasses removed. Sugar originally contains molasses which is then refined and bleached into white sugar.

    i wonder if another good twist would be to used melted brown butter, not sure if the toasty flavour would come through tho haha but omg these look so cute and delectable! i imagine using honey for the lava would work too ;D thanks for sharing

    Thanks a lot for all your mooncake recipes! I was thinking to try making them at home, but I was wondering what can be used to substitute condensed milk since both my significant other and I are lactose intolerant. Do you have any suggestions?

      You can either look for vegan versions of condensed milk, usually made with coconut milk, or find tutorials to make it yourself using any non-dairy milks. It's basically just slowly cooking down milk and sugar until it becomes a thick syrup consistency.

      Hmmm I'm not sure how the molasses will behave once it's baked but I'm sure it'll taste delicious with a traditional crust!

      thank you!! you would have to make a sugar syrup rather than just melt down the sugar since it needs to remain at fluid consistency even while cold. I wouldn't recommend it can be a bit complicated to nail the water to sugar ratio and I don't think it's worth it if you're using such a small amount for this mooncake

      @@JasmaFusionCuisine hi Jasma. I have rebaked the milk tea mooncake. My custard dough can't be as smooth as yours. And the butter can't dissolve with the dough. Though, i have used the same quantity based on your recipe. Even, the butter boiled. I thought i have cooked it too long so i just turned off the stove and let it cool.when i took it out from the fridge, the butter layer was on top.but it was not too much. Is there anything wrong? Thanks before.

      hi!! sugar crystals might be a bit tough to dissolve in this recipe so I wouldn't recommend it and you just have to knead the dough until it's smooth and shiny😊

    Does the texture taste different if using either corn starch or wheat starch for the skin?

      wheat starch gives the skin a more translucent appearance but it doesn't make a super big difference in taste

    Is the snow skin okay to sit in the fridge a few days or does it need to be used and baked within 24 hours??

      the skin doesn't need to be baked! it will start to harden and dry out after 24 hours so I recommend using it within that time but if you have to store it for longer just make sure it's stored really airtight.

    can someone rate how sweet mooncake is? Like on a scale of 1-10 with idk...a mars bar as reference (tried to think of a candy that is globally known lol)

      I have not made this particular mooncake and I would guess this one is maybe a 7 or 8. But I would say typically mooncakes are on the slightly sweet side at maybe a 4-6 depending on if it is primarily nuts or bean paste inside, versus a fruit filling that is more of a 6-7. Hopefully this was helpful! 🥹🎋🥮
