Chateau Kitchen Recipe - Irene's Delicious Lübecker Marzipan Cake - Journey to the Château, Ep. 206

- In this week's Wednesday episode, Patrick and Stuart welcome friend and patron Irene from Denmark to the chateau cuisine. Irene shows how she makes her version of a traditional Lübecker Marzipantorte, one of Patrick's favorite childhood cakes. Patrick and Stuart also have a rainy day visit to the recent annual donkey fair in Lignières, France.

LÜBECKER MARZIPANTORTE RECIPE
for the sponge cake:
4 eggs separated, use whites only
3 tbsp - warm water
salt - pinch
100g - granulated sugar
vanilla bean
125g - sifted flour
1 tbsp - baking powder
for the filling:
4 1/2 cups - whipping cream
whip cream stabilizer
vanilla bean
200g - ground hazelnuts
Marzipan for covering an 8 inch cake.
Add the warm water and salt to egg whites and beat to stiff peaks. Add sugar and vanilla to egg whites and continue beating until incorporated. Combine baking powder with the flour and sift into the egg mixture. Gently fold to combine.
Pour batter into a round parchment lined 8 inch baking pan.
Bake in preheated oven (175° C / 350° F) for 20-25 minutes.
Let completely cool. Remove sponge from the cake pan and cut into layers.
Whip the cream with a mixer until it begins to thicken. Add the stabilizer with vanilla then continue until fully incorporated and filling has thickened. Gently fold in the ground hazelnuts.
Build the cake by using the first layer of sponge on the bottom, spread the filling to cover the sponge and build up a thickness, then top with the second layer of sponge.
Cover the entire cake with a sheet of marzipan, cut off the excess around the bottom sides, then decorate the top with additional piped whip cream and hazelnuts if desired.

The cake looks lovely!! I truly LOVE your dogs!! I think that I shared with you that my first dog ( a family dog) was an Irish terrier. His name was “Pups”. My mother told me that I used to sit on the kitchen counters and I would feed him dog biscuits. ( I was 4 years old). I would give him one and then I would eat one. - I do not remember doing this BUT I DO remember him!!! Elizabeth in Texas

I had an Aunt that would come and we would make candies for Christmas. We would spend the day making several different kinds. And then split the candies for packaging to give as gifts. We loved it...that time together...in the kitchen. Talking and laughing. I miss her.😊

I was smiling when you were talking about your countertops. “We have a fountain “ so funny. We finally decided on quartz for our kitchen and the men who did the template were excellent. The whole process was difficult and time consuming, I COMPLETELY understand why you would need a break. If your content with the work surfaces then everyone else should relax. They are nice and will offer years of good service.

I am so jealous I love marzipan and nuts so much. The cake looked delicious. In South Africa we love our buttercream and cakes are very big and filled with a lot of very sweet icing. My mother used to make a sponge cake with home made lemon curd on and that was fairly plain and delicious 😋

I grew up in an old family bakery in Germany, my dad was a fantastic baker and Konditor, we were very lucky just to get the fresh Bretzels and bread rolls for breakfast each morning. Oh do I miss that!!

Irene does have a lovely calming effect, she made making the Lübecker cake look so easy, I bet it isn't, and the finished result was amazing. Dahlias are so gorgeous, my favourite bloom is the rose which you have lots of.

It was soaked donkeys, exhibitors, visitors……. It got better in the afternoon but I am with you…. Poor donkeys. Irene made it look easy and, following her, it actually is not difficult to make (I never made it before either). Like you, I love roses and of course the other summer blooms make life more colorful. I wondered how you were going to dig up all the dahlias you planted last year. On all the chateau channels I watch, they have never mentioned not having to dig/store at season's end. I am so happy you do not have the extra work for such showy blooms. They definitely hold their own in each room you finish. Not gilding the lily at all. ha! ha! Your peonies are also striking on camera. So glad you have lots of room to create little garden moments. Last day of 4th of July vacation; happy summer guys!

Delicious cake Irene. My youngest son’s life partner is from Munich, Germany and I love the less sweet desserts he bakes for family functions. Keith has mastered his baking skills to treat all of us with this cake as well as several other German cakes. I have traveled to Germany a few times with my son and Keith as well as traveled Europe with them (always a ton of fun). One of these trips I want to stay in your gite. My son and Keith can’t tolerate American cakes and most desserts because they are way too sweet. Your dahlias are blooming so beautifully despite all of the rain you’ve been having, and yes I have to dig them up and store them over the winter. But it’s so worth it because they are so beautiful. I was so lucky that I found an amazing kitchen company in my own city. I created all the designs myself and they created exactly what I envisioned. I sure hope you find someone with some skill to create countertops you envision. I a good thing to wait until you are sure about who you hire.

I know what I'm making this weekend! Oh my gosh!! Marzipan is probably my favourite flavour. I make my own marzipan and use it to cover fruitcakes at Christmas...almond, hazlenuts...yum!!! Thank you Irene for bringing this to Patrick, Stuart and us!!! With this 'iffy' weather, which we're also getting here in Vancouver, B.C. our gardens are growing at warp speed and at this rate, they'll all be done and over with before mid Summer! Lucky you with the Dahlias ours got eaten by mulots. Loved the flowers but the jelly mold even more. The cream stabiliser the wonderful Irene used is Chantifix here in La belle France. I hope you gave some to the fur babies they were so interested. Maybe they want to be portrayed in chefs whites next? 👏👏👏🤣🤣🤣❤❤👌👌
We are lucky they survive here and no critters! The mold is amazing and was in a lot of 20 copper items. 😊. The babies got their treats and so did we with this cake. 🥰😂😘😂. They’d be in a napkin. 😊

Good morning Patrick & Stuart, a most delightful video to watch, so much happening. The cake Irene baked was beautiful and I am sure it tasted great. German baking is ""wunderbaar"" . Now we had a thing here, S. Africans also have a very sweet tooth, hence when I enquired why do we not get Skippy peanut butter here anymore, the representative explained but she also mentioned that they have to make the peanut butter spread "sweater" than they have in Canada! A prime example is our Malva Pudding, but in general our deserts and cake as well as cookies are sweet. You must hear the complaints when it not, they say it is bland baking!! The British bakes are too small :) the American bakes are perfect, I could go on a long time not forgetting the Hungarian and Turkish bakes. Baklava and other phyllo pastries are tremendously sweet, but we love it. You do not eat that all the time, just a intervals. Eat and enjoy and carry on. Nothing beats good healthy fresh cooking and baking. The cacti dahlia is beautiful and so are all the other shapes and sizes. When you decide to do the countertops, it would be like doing a little facelift to the kitchen. Don't be bugged by some comments, it's your life, your chateau, live it!! Did you give the terrors a taste of that leftover marzipan?, oh just a little bit. They could smell the cake hence they were dancing around you and Irene. Oh the Scandinavian countries, they bake a biscuit/cookie type dough and it's shaped into circles and stacked, very flavourful, it's placed on the table and during the conversations each break off a piece and eat and have their coffee or tea! Very sociable I must say. The dough of that baking is usually spicy. So, have a beautiful day, enjoy the new season, enjoy the rain, I know it can become a bit too much, just say to yourself, rather rain than a drought. Many blessings. Kind regards, Elize 😍❤

My Grandmother’s family make an Hungarian walnut torte. One pound Ground walnuts, dozen eggs, 1 cup sugar, one cup bread crumbs, makes a 3 layer cake.
My favourite German cake is stollen. The lübecker marzipan cake looks amazing.

Cake and flowers, it doesn't get better than this. I am impressed how the dairy seems to come in small containers. I have to buy a large carton of whipping cream if I want organic - I only buy organic.
I agree.. and indeed, it is hard to get larger containers here. Most things are in small portions. We try to buy only organic/bio as well. Best decision ❤❤
