i have a new griddle. Gonna make these tomorrow. Cheez Wiz was hard to find (and FIVE BUCKS for a small jar), but I want to try both. I hope I like the provolone more, don't want to spend that kinda money on the jar.

If it wasn't mentioned already, next time render the fat from the ribeye and use on the griddle and also add a little extra grease in the meat for added moisture.

Couple of comments:
1. You really shorted the provolone. That pile of meat needed at least 3 slices, preferably 4. You put almost a whole jar of Cheese Wiz on the second sandwich. Of course it was going to win. Make it a fair fight.
2. This is the first video of yours I've watched and I'm not sure I can watch any more. Who has LEFTOVER prime rib? Those words just don't go together. It's like saying "spaghetti fender cough" they're words, but they don't belong together.
Seriously though, great video. I'd happily eat either sandwich, or both.

I follow way too many of these blackstone pages lol but I gotta tell ya bro this looked good enough for me to follow. As I am typing this my blackstone is heating up for Philly steak. I don't do prime rib because I hate super fatty meat but this looked great and cooked down. I'm using the usual slices ribeye which I get sliced thin from by butcher at a really good price

I like to make my own cheese sauce.
Recipe Beer Cheese Sauce
16 oz of mexican blend grated cheese
8 ozs of cream cheese
12 oz of beer
2 oz of the BBQ rub

Steak and Cheese is possibly my favorite thing to make on the Blackstone (I have the same model and LOVE it). Of all things, we get the frozen sirloin ones from Wal-Mart and love them! I know I'll get flack for that, but a pack of 4 for $6 and they are awesome. Gotta thank Todd Toven for that tip! Love watching your videos man!

Awesome sandwiches Mike but I would go a step further. Lightly mayo your bun and put it directly on top of your meat/onion mix to warm and steam for 20/30 seconds and then scoop it all together......absolute heaven....

Great "How To" as usual. Just curious why one would not salt the meat ahead of time? As for selection of meat, any thoughts on shaving/chopping chuck roast? Just an idea to get great flavor value.
One last question regarding the Blackstone (probably should ask in another vid) but what are your impressions of the drain in the back? I presume it is nice to have the raised in the front for cooking?

Looks really good man! FYI, i'm a cheesesteak snob from the philly area so I need to make some comments lol :)
1. Great job sticking to just meat, cheese, onions - that's a true Philly Cheesesteak!
2. The provolone one was asking for more cheese - i'm sure it tasted great, but that pile was pretty large
3. While wiz is good in some cases, it's like ketchup on a hot dog. You don't get wiz on a cheesesteak if you're over 18 in Philly unless you're passing through ;)

Well, I made cheese steaks both ways, with provolone and with cheese wiz. I gotta say, I really do not like cheese wiz at all. After making one sandwich with it I tossed the almost full jar of it in the trash. I love them with provolone though!

Put the Same amount of Provolone as Cheese Wiz (looked like about Two cups,lol) ... Then try it again.
I accept that criticism. I did my best when filming but I’m a one man show trying to concentrate on a lot at the same time. Thanks though.
Putting cheesewiz on quality ribeye is like dumping ketchup or steak sauce on a $50 steak at a fine steakhouse. It's for people who don't like the flavor of a good steak and want to cover it up. The provolone, on the other hand, can complement it, as long as you don't go crazy with it.
