AMAZING VEGAN BURRITO & BOWL RECIPE 🔥🌯

  • Burrito's should be a staple in everyones diet! So today I show you how to make this high protein but insanely delicious burrito and burrito bowl at home. It's also super healthy!

    RECIPE
    Seasoned Rice
    2 Cups Brown Rice
    2 Cups Water (or veggie broth)
    1/2 Cup Salsa
    (*Add more water if needed)
    Cook for 45 minutes or until done
    Pico De Gallo (large batch)
    4 large tomatoes
    Juice of 2 limes
    1/2 a red onion
    1/2 cup chopped cilantro
    1/4 - 1/2 tsp of salt
    optional: Serrano peppers
    In a large bowl, add diced tomatoes, lime juice, diced onion, cilantro and salt. Mix together and set aside for at least 15 minutes.
    Sautéed Veggies
    1/2 red onion, sliced
    1/2 Red Bell Pepper, sliced
    1/2 Green Bell Pepper, sliced
    1/2 tsp garlic powder
    1/2 tsp onion powder
    Sauté with a tbsp of water until cooked
    Never-fried Re-fried Black Beans
    2 cans of black beans (drained and rinsed)
    1/4-1/4 cup of water (salsa or veggie broth works too)
    1 tsp of garlic powder
    1 tsp onion powder
    1 tsp cumin
    1 tsp chili spice
    1/4 cup jalapeno slices
    2-3 tbsp nutritional yeast
    Salt to taste
    Mash beans in a sauce pan with water and the rest of the ingredients. Sauté for 10-15 minutes. Add the cooked beans, rice, pico de gallo, with some greens to a wrap or bowl.
    Tortilla Shell I used - Bake Stone Brothers (purple wheat, kale and quinoa) wraps.

    Mexican pro tip: chop the onions first, then add the jalapeños, Salt and lemon, then you can take your time with tomatoes and cilantro, that way you can eat the Pico de gallo almost instantly... 😉💪

      Red or green peppers will add some crunch to it as well. In Costa Rica this is a typical salad

    If u want Mexican Grandma secrets to red rice:
    In your pot that u will do ur rice in:
    Over med heat
    Throw some oil or broth, throw in half a onion, 1 garlic, 1 jalapeño(jalapeño optional).
    After like 2 min throw in raw rice and move it around till it's all yellowish (NOT BURNT) should only take a couple of minutes.
    Throw in ur red sauce from ur video(it will steam all crazy but THATS OK) stir that around for a couple of seconds coating all ur rice.(if no red seasoned sauce use about 3/4 of a small tomato sauce can, vegan bouilian(use the most of all spices),a bit of salt,pepper,and a tiny bit of cumin.TASTE the water.how broth taste is how ur rice will taste)
    Then add HOT water, bring to a boil and after like a min, take down to low heat and cover it. OPEN IN 15 min to see if the water has evaporated if not give it 2 min increments until water is gone. Then turn off take off of the burner and KEEP IT THE TOP ON for another 5 min. Then SHABAAAAM - Mexican Rice in Canada 😊 yes it's long but you've helped me with so many recipies and appreciate it so much 👍

      A bunch of vegan doctors were asked in some doc or other what they ate in a day and Neil Barnard had something to say that stuck with me; the food of the world; every culture has something new I haven't tried so always am learning about people through their national cuisines. Lovely guy.

    I made Budda bowls. Cooked the rice as regular then added taco packet. Cooked up onions, peppers and cut up mushrooms sauteed them. Refried beans with nutritional yeast. Salad mix with spinach. Cut up roma tomatoes and avocado. So good. The rice cooked that way was bangarang. Tks for the info.😊

      I don't know, even in US states where it's legal, people don't seem as happy. (The US usually ranks low on happiness among developed nations... I think the stress of low wages and lack of healthcare are two of many reasons.)

      @@womanofacertainage5892 wages are really only low at jobs that dont require a degree from what I can tell. And the countries that are ranked highest have less people overall. The majority of those people are also natives to the country, not much diversity to bring in the adversity.

    I don't understand how so many people out there don't like cilantro. But then again, I sort of get it...It might be the same as how I am with celery. lol If the celery is too chunky and/or detectable in my food, I can't eat it. Can't stand it raw either unless it's reeeeeally small diced and mixed like in a mock tuna chickpea sandwich. Cilantro though, I can eat in all forms no problem. 😊

      You are a sweetie!! I always feel so bad for Unnatural Vegan because seriously she hates everything and is a woman of sterling integrity … I can eat almost anything that isn't moving (sorry Woody Allen bad joke) but hate cilantro. Conversely the taste of Italian parsley is equally strong and love it. Always ask people what they like or not if inviting people over for food and conversation etc. … great thing to remember; NEVER try out a new recipe on people. … other stuff people gag at; my Dad and I used to eat thinly sliced onions on black bread slightly soaked in olive oil … still vegan but would stick to tomato slices on hummus with some sliced onion these days …..

      Omg, parsley! There was a seafood place that the whole family would go to a lot while I was growing up, and the restaurant would use parsley to garnish everything. I'd eat mine after eating my meal and wonder why there was such a tiny portion since I wanted more. Meanwhile, everyone else is munching on their fish/shrimp and shoving their parsley aside. After they were done eating, they'd push their plates aside and continue chatting but no one ate their parsley. I asked if they were gonna eat that and they said it was just something the chef uses for show but that yeah I could have it if I want. Yum!! lol
      Edit: Oh! I forgot to respond about Unnatural Vegan! I actually feel mixed about her...she seems to have a good head on her shoulders, but I don't like how she goes on and on about anything negative she feels about what/who she's talking about. Like with Ellen Fisher...Unnatural Vegan decided to pick on her a few times and I like how Ellen handled things. She knows people have different ideas on things and that it's okay to agree to disagree, that everyone is going to do what works for them and that it's okay. What does Unnatural do? Finds more stuff to bug her about. 🙄🙄 Same with when she was rating those ice creams that So Delicious came out with awhile back (the Blueberry Cardamom is my fave!). When she got to the one with maple and pecans, I forget now what she complained about, but it almost made me not want to try it since she was so dead set against it. I had to remind myself that she's Unnatural Vegan though and that she's basically a real-life Daria (from Beavis and Butt-head). I'm soooo glad I tried it out because I love it as much as I love the Blueberry Cardamom. The maple is a perfect blend of everything it claims to have; Unnatural was complaining about it not having enough of or too much of something in the blend, but whatever. 🙄🙄 I like listening to her when she's talking about true-facts info though, just not when she gets on an opinion tangent. I try to avoid her channel because she gives me a headache, but she'd be fun to watch/listen to more if she wasn't so negative a lot. She really does seem like a nice, smart person...I just can't handle all the negativity. She needs to just mention briefly what she doesn't like and then move on. lol

      Celery makes sense to me, but kale? 😮 It's a little tough and bitter when first pulling out of the refrigerator, but have you tried massaging lemon juice into it (with or without salt) for a few minutes? It tastes reeeeeally good that way. I sometimes make FullyRawKristina's kale Caesar salad too. 😊 Kale also pairs well with bok choy in garlic fried rice. ❤️ Oh! As with the parsley story I mentioned to the other person, I also have a kale story. lol When I was a teen, my mom and I would eat at this little restaurant every so often. My go-to there was their catfish and lightly steamed veggies which was garnished with kale and a lemon wedge. I squeezed the lemon in my tea, and saved the kale til after the meal (made a great natural breath freshener too). You should've seen the look on the waiter's face when we asked for more kale. lol He brought out a really tiny piece...I ate it and we had to flag him down to ask for more. 😂 He was annoyed (probably) because he brought out a really nice big helping of it, enough where most people would be like wth? Joke was on him if that's the case because I ate the whole thing and was satiated. 😁 Anyway, this same thing happened on maybe 2-3 more visits when the manager came out to see who the mystery person is that's requesting all this kale. When he first approached, I thought he was gonna get on my case about it, but he asked why I ask for it all the time and what I'm doing with it. He was surprised I actually eat it since most others there just let it get dumped in the garbage. He knew how healthy kale is and was so tickled pink about it that from then on there and beyond, when he was working in the back and heard there's a request for extra kale, he had a hunch it was me and would bring a big plate of it out himself and chat with us a bit if the place wasn't too busy just yet. 😁 ❤️

    Avocado tip: never buy an avocado with the nipple (top) of the avocado missing. If the little black stem attachment is missing the avocado will be dry and rotten inside. Black nipples missing/don’t buy it

    Great recipe!! Quick tip: For the pico, chop the tomatoes and put in a strainer while you chop the rest of the ingredients. Then the pico won't sit in a lot of tomato water the next few days. YUM!

    Hi Derek! A thing that we mexicans do sometimes with the pico de gallo it’s add chopped avocado to it, so you can always have avocado in your burritos

    I make homemade salsa all the time. It is delish! But love a tiny bit of jalapeño blended in with some of the salsa water juice in a nutribullet. And I add some minced garlic.

    Had burritos last night, and leftovers as a burrito bowl for lunch today! What a coincidence. It's a staple in our house. Lots of good tips here. Here's a hack that I've been doing lately: Add zchug (I make mine without oil or salt) to the burrito. It works just as well for Mexican food as for middle eastern food. So yum!

    I found some wholemeal tortillas
    In a supermarket and they are great
    I have used them with chickpea curry and rice
    Like roti or chapatis
    Now I can make a burrito
    When I cook some Spanish rice
    and prep the beans at the weekend.

    Hey Derek, liked the idea of this recipe. On my second attempt I boiled the black beans with some baking powder as I would canned chickpeas for making hommus. I found this made the beans easier to mash and the resulting 'mince' far smoother. Just so you know. Thanks for the recipes my man.

    I just made my first burrito bowl ever. I didnt follow this to the letter due to using what I had on hand, but it was amazing. Always been a burrito guy, want to look into making my own. Learning how to cook with flour is my next goal on whole food plant based.
