    I came to this video because I realized that the problem of the collapse of my chiffon cakes was due to the high gluten content in my flour. Since I can't find cake flour in my area, I thought about using rice flour. Now I see that your chiffon cake using rice flour has a beautiful texture, that gives me hope! Thank you!
