After a year and eight months of staying home, there was something a bit comforting about the way you said "this Coronavirus situation we all have to be going through at the moment. Right, enough of that..." I started making bread back then (like everyone else did) and have stuck with it except during the hottest months of the year. There is no length of time longer than the time you have to wait for the bread to cool so it can be sliced.

John I always watch your videos for the masterclass you give in working efficiently in the kitchen as well as the techniques you use. I often will view them if following a different recipe because how you prepare and organise inspires me to work and cook better. I have been making my own bread for a few years and recently moved over to no knead, but instead of doing what you do, I do it 'slow and easy'. I use cold rather than warm water and mix it with a wooden spoon handle like you and then stick it in the fridge overnight. It rises slowly overnight while I sleep. Before showering/dressing I remove it from the fridge to start to warm up to room temperatre. After breakfast I de-gas the loaf and shape and then do the rise in the bread tin in my central heating boiler cupboard and like yours it comes out as a great loaf with the minimal of effort with the great bonus I am sleeping whilst the dough is doing its work!

I'm so glad I found this. as a Brit in the USA I find the white breads for sale to have far too much sugar in them, making them useless for a regular savory sandwich and only good for 'sweet' sandwiches.

Lapsed baker here. We've done a couple of artisan baking courses with guys in London who've worked for top chefs & your techniques are right, right up there. Marvellous to watch & inspirational in these times John! I think our old cooker, which looked very like your previous one, died when yours did so also we have a new one which must just be a different model to yours as it's so similar. That trick with the light, is it just so you can see the rise? Off to restart baking in a few minutes!

WOW! What a fabulous lesson. I have never seen the yeast mixture look so activated. I am going to have a go at this. I am actually excited. The loaf is a shape that will prevent wastage of small end bits. Great tip with the warm water bath and the 5 minute oven bake to finish off the crust. By the way your new range is a dream. Any tips on how best to keep it fresh for a couple of days, as I am the only one who adores bread here? Mind my chooks love it too.

I was going to make this recipe today but I came across a no knead recipe you did ten months ago. Hi John. Just wanted to say that I used this recipe to bake my first ever loaf of bread at the weekend. I was lucky enough to have enough to use all bread flour and the outcome was brilliant accompanied by some lovely smells. I spend a lot of time cooking but have done very little baking. I discovered your channel some time ago and have followed many of your recipes. All I can say is that I have been baking my own bread for many years (I’m 74.) but your recipes are the tops. After a year and eight months of staying home, there was something a bit comforting about the way you said "this Coronavirus situation we all have to be going through at the moment. Right, enough of that..." I started making bread back then (like everyone else did) and have stuck with it except during the hottest months of the year. There is no length of time longer than the time you have to wait for the bread to cool so it can be sliced.

John I always watch your videos for the masterclass you give in working efficiently in the kitchen as well as the techniques you use. I often will view them if following a different recipe because how you prepare and organise inspires me to work and cook better.
I have been making my own bread for a few years and recently moved over to no knead, but instead of doing what you do, I do it 'slow and easy'. I use cold rather than warm water and mix it with a wooden spoon handle like you and then stick it in the fridge overnight. It rises slowly overnight while I sleep. Before showering/dressing I remove it from the fridge to start to warm up to room temperatre. After breakfast I de-gas the loaf and shape and then do the rise in the bread tin in my central heating boiler cupboard and like yours it comes out as a great loaf with the minimal of effort with the great bonus I am sleeping whilst the dough is doing its work!

I think our old cooker, which looked very like your previous one, died when yours did so also we have a new one which must just be a different model to yours as it's so similar. That trick with the light, is it just so you can see the rise? Off to restart baking in a few minutes!

WOW! What a fabulous lesson. I have never seen the yeast mixture look so activated. I am going to have a go at this. I am actually excited. The loaf is a shape that will prevent wastage of small end bits. Great tip with the warm water bath and the 5 minute oven bake to finish off the crust. By the way your new range is a dream. Any tips on how best to keep it fresh for a couple of days, as I am the only one who adores bread here? Mind my chooks love it too.

When you said it brought back memories of your grandparents, I remember mine too, over 60 years ago, watching Nana baking bread on her huge old black coal fired range, I can still smell the bread baking, I'm convinced that's why I became a self taught, self employed cook, now retired of course, and my son (who is also a chef) and daughter in law now run the family business, and doing a great job of it.

Just a little extra information to help you along if you do try these baguettes.
Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ruclips.net/video/HWpSbYV96_c/видео.html

I was going to make this recipe today but I came across a no knead recipe you did ten months ago. I normally make your sandwich loaf but I thought I would do this old recipe, and it’s absolutely as perfect as bread can feel, look and taste, so I’m afraid I’m going to abandon the sandwich recipe and stick to this one😂😂

I discovered your channel some time ago and have followed many of your recipes. All I can say is that I have been baking my own bread for many years (I’m 74.) but your recipes are the tops. I regularly bake the sandwich loaf and a big hit with my family are the hot dog buns. We call them ‘bunnies’ locally. I bought your book, can’t wait for the next one. Keep up the good work 😀

John, you are a marvelous baker! I have made many different loaves of bread, particularly rye bread through the years. Yours, by far, is fantastically superb. I shared some with my neighbor--after gritting my teeth--and she said that it was excellent!! I am now on my way today to bake your white loaf--not sure which one--but I know that I will be overly satisfied with whatever I choose. Bake on, John, and yes, you do sound like my Pooh.
