Cashew fruit xacuti by Chef Rego from Goa

  • Everyone knows of the xacuti but not everyone knows where it originated. Presenting to you my twist to the Goan xacuti prepared with the seasonal cashew fruit. A spicy blend of lots of spices comes together to create this iconic dish. A dish from the traditional Goan Hindu households that is so popular across Goa and the Globe. Do try it out with the local cashews that are available in your locality.
    Ingredients
    Fresh cashew fruit - 4 to 5 nos
    Fresh grated coconut - Half no
    Dry red chillies - 4 to 5 nos
    Coriander seeds - 1 table spoon
    Cumin seeds - 1 tea spoon
    Poppy seeds - 1 tea spoon
    Fennel seeds - 1 tea spoon
    Star anis seeds - 2 nos
    Mace flakes - 1 no
    Cloves - 4 to 5 nos
    Cinnamon stick - Half inch in size
    Turmeric powder - Half tea spoon
    Nutmeg power - Quarter tea spoon
    Tamarind pulp - 2 table spoons
    Sliced onion - 1 no
    Garlic flakes - 3 to 4 nos
    Ginger - Half inch in size
    Coconut oil to fry
    Salt to taste

    Hi Chef, I’m really enjoying watching your videos. I’m Goan (family from Divar and Corjuem areas) but grew up abroad. I feel sad not being too connected to my Goan roots but your videos and the explanations of the history and your method make me feel more connected and proud to be Goan. Thank you for sharing your knowledge for future generations to enjoy, myself included.
    I have one comment - the camera person who does closeups using the side camera seems to have trouble getting the shots in focus. They are often out of focus and it makes seeing what you’re doing difficult. If they are able to improve that skill it would help the viewers see better what you’re doing.
    Take care, and please continue your good work. And one recipe request - can you explain the vindaloo dish? It’s often seen in menus abroad as a Goan dish but I would love to see how you describe it! Thank you!!!

    Seems worth preparing, I thought cashew apples were only for applying salt and keeping it in the sun, then eating. Come on chef give us some more caju bonds recipes, can I ad some meat precooked in this xacuti. Thank you sir. Must work it out.

    I tried this recipe with mix veg now...
    But garam masala taste is over powered.... 😭
    Though I took the same measurements as mentioned in recipe..
