- An age old recipe bought to life by Chef Rego. Simple, local and naturally cooked Mackerels. Marinated with salt and lime & cooked in hay.
CAVALAS FUMADAS - INGREDIENTS
Mackerel 5 nos
Dried hay for smoking mackerel
-For Marination
Juice of 2 lemons
Rock Salt as per taste
-For stuffing
Sliced onions 1 no
Slit green chilli 5 nos
SALADA DE CAVALAS
-For Salad
Flesh of smoked mackerels
Roughly Chopped onions 2 nos
Roughly Chopped tomatoes 1 no
Finely chopped coriander 2 tbsp
Finely chopped green chilli 1 no
Juice of 1 lemon
Olive oil for mixing

We had that salad ,with left over mackarel or sardine fry.
Here it is smoked.
Wrapped in banana leaf over a hot tawa also works
V V tasty,with a drop of vinegar instead of lime juice.
I feel so nostalgic for the authentic Goan food. Thanks for reminding us of our beautiful culture and cuisine.
