I reckon to prepare the hot oil. The fist step to heat up the wok then fill in the oil and heat around 150 to 160 degree C. The deep fry the meat, it will not cook dark.

I can't find Sao xin wine in 99 Speedmarts. Where do you buy Sao xin wine, in a specialised Chinese grocery store?
Try at supermarket or chinese herbal shops
@@CookingAhPa OK, is Chinese herbal shop selling them?
If the char siu pork doesn't have Sao xin wine, will there be any difference?
Will it work with beef belly? Just wondering..
Hmm...i have no idea. Why dun u give it a try then let me know the outcome?
Nice 👍 👍 👍 Yummy 😋 😋 😋 🙏🙏 🙏 Thank you
Red Fermented, light soya, Shaoxing wine, oyster sauce, white pepper, salt, sugar

Ah pa I got 2 question
1) what coooking oil do you use?
2) after deep frying and got remaining oil what do you do to it?
1. I now use peanut oil. 2. Depending whether it’s still clear or not, if it’s still very clear, i will filter it and keep in metal containers for second fry. If not clear, i will just throw.
You can try pan-frying method. I have done that and the result is the same with just 2 tbsps oil.
can I cut the pork belly first only then fried it?
It will be dryer inside, up to u
@@CookingAhPa
ah pa, have you ever use chicken meat instead of pork?. I'm wondering the taste of that fried chicken
