Beef Chow Ho Fun | How YOU Can Make Restaurant Quality Beef Chow Fun

- You may have all the beef chow fun ingredients at home. But if you don't cook beef chow fun right it will not taste the same as your favorite Chinese restaurant. I'll show you one simple cooking tip that will elevate your chow fun noodles to Chinese takeaway restaurant level.
I have fond memories of eating beef chow fun in NYC's Chinatown. I remember it was super tasty and satisfying. I also remember it was a pricy dish. In NYC beef chow fun these days cost around $10USD.
Which I'd gladly pay for if there is a restaurant selling beef chow fun around my neighborhood in Bangkok. But, it doesn't exist here in Thailand.
So I made it a mission to cook one up myself. All the ingredients can be found at my local wet/dry market.
This recipe and technique is as close as I'll ever get to the classic beef chow fun!

Ingredients:
Makes 1 to 2 servings
500 grams flat rice noodles (ho fun)
1½ cup bean sprouts
2 stems Chinese chives
¼ yellow onion
For beef marinade:
150 grams topside beef
1 tablespoon soy sauce
2 teaspoon Chinese cooking wine
1 teaspoon pure sesame oil
Dash of ground white pepper
½ teaspoon baking soda
1 tablespoon cornflour (a.k.a. cornstarch)
2 tablespoon water
1 tablespoon oil
Let beef marinade for 5 minutes.
Finishing sauce:
2 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
Cooking instructions:
Add 1 tablespoon vegetable oil to hot pan on medium high heat. Add beef and cook until medium rare. Remove and set aside.
This is where we start cooking the noodles. You need to have a high a heat as possible. Gather all your ingredients get ready to add them as the cooking should be fast.
Add a tablespoon of oil followed by the noodles. Move the noodles around so it won't burn. Some of your noodles will develop brown and black marks and shrink a little. Cook for another minute then add the onions and bean sprouts.
Continue cooking for another minute or so until the onions start to look transparent. Add finishing sauce and then beef. Continue stirring until all the ingredients are coated with the sauce. Then throw in Chinese Chives and cook for another minute.
Dish and enjoy!

Pro Tip: If your kitchen stove or electric induction stove can't get hot enough to achieve "wok hei" just turn it up as high as you can and cook the ho fun noodles longer as needed.

@@xuedalong Cantonese is spoken in Guangdong and Guangxi, too. Among other places. Certainly not only in Hong Kong. That said, it is very much a minority language in China.
Just remember that 99% of Chinese people cook on the same kitchen stoves or induction stoves and don't even think about 'wok hei'. That's a peculiarly American obsession!
I saw some videos that they use blow torch to mimick the wok hey or the burnt bits

Thank you so much! My family love beef chow fun but no matter how many times I made this I could never make it taste restaurant style. Until you told me about using high heat. Fortunately we do have a strong fire on a stove, not as strong as restaurants but good enough. All this time I was gently cooking my chow fun in medium heat. When I switched on high heat I finally reached restaurant quality.

The wet noodle version (in garlic pepper sauce) is equally tasty except messier and must be eaten fresh out of the wok.

This is hands-down the best beef chow fun recipe/video. I've made beef chow fun a lot of times unsuccessfully but this recipe from Wally using his tips is no-fail. I've made his recipe about 4 times and it gets better every time!!!

I really enjoyed your video on Peking Pork chops and this one. It's actually two of my favorite dishes. Your video described the recipe in a way I can easily understand. It's kinda ironic on my part that I'm living in NYC wanting to learn to cook NYC chinese cuisine, and I did it by finding a youtube video from a guy who lives in thailand who have fond memories of NYC.

I'm originally from NY and while living in NJ I used to go to this Chinese restaurant and have chow fun every Friday. Now I live in Texas and for the life of me I can not find a restaurant that makes this delicious dish. I miss it so much. I would love to make at home but to find these noodles is like looking for a needle in a haystack. Watching you cook my mouth was watering!
Hi Lorena 😃 A couple of my NYC friends have moved to Texas to raise family and work too. They love it there. Should be many really good Asian foods too as there’s a large community many have opened restaurants from Chinese to Vietnamese.

Dear lord summers are so hot and I love and miss the falling leaves (not singing) and the snow in winter. Probably because I'm a fall baby and it's my favorite season.
Yes, I actually work with 32 Koreans and have learned to cook with them a lot. But for some reason I was having trouble finding those wide thick delicious noodles. But today was a good day, because I found them on Amazon. Yeahhh!!! Tomorrow I will be cooking finally some beef chow fun, following your recipe. I found it easy, simple but very, very tasty. God you should have seen on this side of the monitor, I was drooling and can almost smell them when you were describing how to get the flavor like in a restaurant. I will let you know how they came out. Don't expect to be perfect the first time but cooking is one of my passions and I truly enjoy it.
Yes, Texans love their meat! And they make it awesome. I like meat but I prefer and love, love, love vegetables. And that is what I am learning to do. I did exactly what you said and used a large cast iron skillet to achieve the char taste.
