For Carolyn’s cake there’s no reason not to cut it in ladyfinger size pieces so it is easier to assemble.
Interesting you say that as the fingers of cake that were around my main part, I turned into mini tiramisu were much easier to wet I just dipped them in the coffee/rum

I'm a professional cynic, so I suspect a certain miracle drug popular among celebrities might have something to do with it ;-) Nothing wrong with using it if you can, (I do and it works great with keto), but would be nice to be open about it too. But if I'm wrong and that's not it - all the more respect :-)
Nope. No ozempic or any other drugs here. (In fact, I was able to get off my blood pressure drugs!)
Moving to a large city and the active walking lifestyle that encompasses played a big part. I also sold my car and traded in regular happy hour drinks for regular bicycle rides. :-)

My solution for ladyfingers is... keto waffles. The rectangular variety. Make them using any keto waffles recipe (just don't make chaffles! I usually make them from golden linseed/flaxseed) - then cut them into strips and use them as if they were ladyfingers. Works great and is significantly less work than baking all the stuff.

You did great with these cakes Wes! Just a tip when using the glass tray pan you can just turn onto a board and peel paper off. Then cut it in half, after dowsing with the syrup and layering the cream on one side place the other half on top… dress the top and voilà! One cake no chopping bits off… ❤

@dana102083 the original recipe will have been made with espresso, but American 'brewed coffee' is usually very weak in comparison.

One thing though I am surprised that the person didnt (the sheetpan one) tell you to take a skewer and poke holes in the cakes so the coffee seeps through thats the way that its normally done and I would even do a bit extra on the round

thanks for this Wes. I think you could sub in half of another sweetener for the erythritol. I often do this to stop the cooling effect, which I find off-putting. I like the idea of the rum addition. Will make this for a special meal.
