I usually use a scratch recipe, but my favourite cake mixes are the Greens vanilla cake, and chocolate cake mixes (they're only about $2.50 - nothing fancy) They make about 12-14 cupcakes and you need a double batch for the giants (you'll have some leftover to make cupcakes) they're super easy to make and come out perfect almost all the time. :)

Hmm, are you letting the giant cake cool for about 20 minutes before trying to remove it? I'm not sure, but it sounds like maybe the mix is a little undercooked, and this could be a problem with your oven. To help with a faster, more even cook, you can place a metal flower nail (available at cake decorating stores) in the bottom of the larger half of the giant cupcake mould. This forces additional heat into the centre of your cake, and speeds up the cooking process. Hope this helps :)

    Ellie (MyCupcakeAddiction),
I have an idea for the top, but I'm not certain that it would work.
When baking the top-dome part of this cake, do you think that if you were to spread the batter a little bit up the sides of the mold before baking (using a spatula or just wiggle the mold), then would that reduce the dome in the center, so that you won't have to trim as much cake off?
Would you be willing to actually give this a try for me and reply back with results? If this works it would be awesome.
Oh, here's a little tip from my own experience:
When trimming the sides of a layer of cake, just pick it up, hold it in your palm the same way you'd hold a big heavy book, start slicing into the side and rotate the cake as you sort of shave off the sides. If done right you get a long even ribbon of cake and the cake you trimmed is still nice and round.
