Hurray! Welcome to #74Dishesofindia today we all
embark on a journey together exploring recipes from all
across India. We are starting with this colourful Ladakhi recipe (almost looks like our flag) called Skyu which is like a Ladakhi pasta, if I may say so and I will need to perfect this by cooking a few times. Thanks to you guys I was put in touch with @artisanalalchemy and they were kind enough to take me through few favs of Ladakhi cuisine and helped me understand Skyu as a dish which can be made in many versions, with milk or with onion tomato base and they have different names for different versions. For instance the one l've made here is with milk and is called a O-Skyu actually. Try and use as many root vegetables as possible when in season like turnips are a house favourite there! Also on a lighter note: if you ask a Ladakhi every that should you add garam masala or any other masala to their recipes you'll get a look of a lifetime No MASALAS IN THIS. It's the flavour of the sabzi and the milky broth and wheat Skyu. I had so much fun rolling and shaping them. (Hint: cook this together for a date night) Hope you enjoy the recipe.
