I just made this soup and it was great! I left out the peppers but added nutmeg and cinnamon, then added light coconut milk! It was great and I’m glad I tried it!
Love this soup. I make it like you do, but I use a can of purée of pumpkin instead of the sweet potato. I also like to add some lightly roasted cauliflowerettes to the top as a garnish. We like a bit of heat so I add 1/2 tsp peri peri along with spices like yours. You are my favorite cook to watch and learn from 💓
I have the same pealer and I believe I bought it at Walmart. I’ve had it for quite a few years. If I find one I’ll let you know. I too love butternut soup. I add a Granny Smith apple too. 😋😋😋😋

Dear Dimitra, Love watching your videos. We love butternut squash soup. Maybe you want to try mine. I cut the squash in half scoop the seeds, no peeling , sprinkle olive oil and roast it face up at 400 deg until soft and get caramelized , than scoop the flesh, so easy, and cook same as yours, you can also roast cut pieces if you wish. This method adds a lot of flavor to the soup. I will add a sweet potato next time, I never did. Thanks.
Oxo has this peeler, I bought mine from Homesense which is the Canadian version of your Homegoods. It is sharp and perfect for peeling pumpkins and butternut squashes.

We call the immersion blenders 'stick' blenders, well worth the cost. The soup looks delicious especially with the added chilli flakes and red peppers
