- With so many beer styles to brew and yeast strains available for fermentation, it can be a bit overwhelming for homebrewers to decide which strain is right for your recipe. Lance Shaner of Omega Yeast Labs breaks down the vital stats of yeast strains -- phenolics, flocculation, attenuation, temperature range, alcohol tolerance, flavor profile -- and offers expert advice on using this information to pinpoint a yeast strain that will get you the flavor and performance you want. Using CRISPR to genetically modify yeast strains for brewing is such a flex
Very educational!!
Thanks so much. It was really fun to sit down with Lance at our Northern Brewer Milwaukee store and get geeky on all things yeast. If you haven't yet, check out our full class on yeast. Here's the short trailer for the video course. I learned a LOT while producting it. (Chip) ruclips.net/video/Thz0H8OKKu4/видео.html
Awasome info
There are no brew shops where I live, what is a good place to order malted grain in bulk? I would prefer quality grain.
We carry and ship a large variety of grains. Have you checked out our selection?

i can only do extracts…so whichever yeast came with the kit. though i use yeast food to give them a kick
Is there a yeast I can use in making lagers and pilsners but with a fermentation temp of around 72-74 degrees? I've heard I can get off-flavors if fermenting beyond the recommend temps.
I've heard of some lager strains working fairly well (and clean) into the 60s, but I'll have to check in with our brewmaster crew to see if they can suggest one for all the way into the 70s. (A cleaner kveik such as Omega's Lutra strain could also be a possible option.) I'll try to get back to you ASAP.
I know this is old...but look into pressure fermenting if you haven't. I can lager at those temps with kevik.
Funny, I actually switched to Kevik shortly after making this post. Haven’t used anything else since.
@brieninsac it's a great yeast for those of us without temperature management. I do use others in winter when it's cold and it's a real nice variety for sure. Also do them sometimes with an allrounder and spunding valve.. the pressure cleans up the taste to suppress yeast off flavors. Happy Brewing! :)
