This is very similar to how I cooked my boneless turkey breast for Christmas. However, I used some leftover buttermilk to brine the turkey and then patted it dry before coating it in a mixture of my favourite spices and herbs (including tarragon). My turkey breast was small enough that I could brown it on all sides using the Sauté function of my Instant Pot, prior to pressure cooking it. I was also able to fit several Yukon Gold potatoes around the turkey. I served the turkey, gravy and potatoes with my Instant Pot Cranberry sauce (cranberries, orange zest and juice, and sugar) and lightly steamed broccoli and it was quite simply the best Christmas dinner I have ever eaten.
Ha! I was just noticed my InstaPot rack and was wondering what I would use it for. Now I know! This recipe looks amazingly delicious. Going to definitely try it!
