- After being forced to shut down his original pop-up in March, the owner of Old Greg's Pizza began making his sourdough pies at home to share with friends, family, and chefs he knew. The style was something new in Miami: square pies made with a sourdough base covered in crispy pepperoni cups. Once word spread, thousands of people began requesting a taste of Old Greg's pies. So in July, owner Greg Tetzner partnered with Miami chef Brad Kilgore and opened a pop-up for takeout. On Wednesdays, the pop-up hosts "pizza drops" through its website where customers can sign up to get a pie. With so much demand, many have to wait weeks for a taste.

He inflates the demand by producing less on specific days. It creates hype & makes his product a niche & that's his novelty. That's it. It's a great strategy btw. Sourdough pizza aren't rare. It's just good marketing & less production that has done wonders for him. And his marketing is so strong that we all watched his ad.

Exactly. 90 pizzas a day is basically a rounding error in volume for most pizza places - even for smaller niche ones. Technically you can’t tell if demand is high, because volume is so low. The product looks great, and I’m sure it is, but acting like selling out months in advance is something crazy when you’re limiting supply so dramatically is unnecessary.

This is literally the Supreme of Pizza. Artificially low supply with an overwhelmingly high demand due to fake hype.
you can only make a certain amount of these, since usually the dough has to rise for 4hr right in the pan that it bakes in. It's not artifically low supply...you can only fit so many square pans in a rising area, and only bake so many at a time.
Trails & Travel you’re still limited by oven capacity, storage space for the rising dough trays...etc. It’s really not as easy as scaling a flat circle pizza operation lol

Or you know in a month you can cultivate your own sourdough culture and make your own sourdough pizza in an oven.

We accidentally made sourdough pizza last month. We took a ball of dough out of the freezer and put it into the refrigerator to thaw. 5 days later, the ziploc bag with the dough in it had a brown liquid in the bottom that was very yeasty smelling. We drained the liquid then rolled out the dough and made pizza. It tasted 100% like sourdough crust pizza and was the best pizza we've ever had.

I like the local pizzeria we have been going to for 27 years. The pizza has been good and it has been like some sort of tradition to be able to eat this at least twice a month. It has been consistent while all of these other places come and go.
Its a nice story but I'm not waiting a month to get a pizza, no matter how good it is.

If there is that much demand, you need to expand your operation. Leaving a lot of money on the table.
not really, part of the reason for the demand is because of the limited availability, which also helps control costs by minimizing overhead and food waste. the overhead from maintaining constant availability is what kills a lot of restaurants as well as having so much inventory ending up not getting sold and having to be tossed out. expanding means increasing operating costs and risks deflating demand. expansion does not always lead to bigger profits but it always leads to bigger costs.
doewnskitty agreed. I work at a pizzeria and I feel so bad throwing away the slices we have leftover. :/ Thats why I usually give them away to local businesses that way they come back for more :)

Not in 2020. The restaurant industry is being held back by the pandemic and by local and the federal government who can shut a business down for the sake of safety, but aren’t willing to subsidize businesses while they aren’t making money to pay rent and salaries.
theyre so dumb instead of expanding and growing their audiences they make them wait weeks for food. that's looses a lot of people who just quick and easy food. I know making less supply creates more demand but thats not exactly the case for food. they could get more revenue from just making more food instead of having a limit of customers per day. if the get a bigger kitchen and more staff they could even have multiple locations. if people are waiting weeks for your food they buy less from you but if they get it immediately they simply going to buy more and a good marketing strategy would be to get them in a community just like how amazon is doing were you get people to be loyal to your brand by making social platform and loyalty gifts.

I've been trying off and on for about a year to make a starter to try to make a sourdough pizza no luck so far
Start with rye flour same amount of water. Then when you start seeing activity refresh with more and more wheat.
Sounds like it is time to expand.

I saw a video about this guy who is fermenting yeast for a really long time like 10 years. I really wonder if it just becomes a science experiment at that point tho instead of being luxurious and trying to make the dough better? This guy said he makes 90 pizzas a day. That's really not that many. He sold out months in advance with 90 pizzas a day. I will say that it's a good move to keep business coming in to keep making money but in regards to the taste and if it's worth it to wait a month, probably not. He could expand but to do that during a pandemic wouldn't be smart. So he knows what he's doing.

This is a great marketing strategy... these people will never go out of business, limited availability makes people want it more, even though its also because the food is decent, the chance of not getting it makes it even more desirable then otherwise. They'll never run out of anxious customers.

Even though I still order pizza when I’m too busy to cook, I prefer fresh dough instead of frozen mass prepared dough. The taste and the fluffiness is unparalleled. 1:39 You can also make Fried pan naan from the same dough. (The taste is out of this world, like old school stone charcoal oven taste) mama mia!! 🍕
I’ve also seen major franchises selling pizza kits, but with the same frozen dough. The secret is the fresh dough, and fresh homemade cheese for that classic italian taste. Homemade cheese is a whole other ball game, though.

Man your dough at any pizza place (even fast food) probably isn’t frozen. It’s just that the people who created the dough recipe have to idiot proof it for the proofing process. That’s probably the biggest difference is that at home you have way more control over the fermentation times and such but at like Papa Johns they deliver dough two times a week so your dough on Tuesday might’ve spent one day in the fridge and then on Friday maybe it spent three

Is this where I tell you that literally anyone can make this at home, it's one of the most simple foods to make, the hardest part is making the dough at least 4 hours BEFORE you want to eat, like make it in the morning takes like 10-15 min, pre cook the dough before topping, and all you have to do at night is put cheese, homemade pizza sauce, and pepperoni on top and put it the oven, actual time in the kitchen about 30 min.

That's really similar to Buffalo style pizza, but it's square instead of round. Thick crust, but light and more airy, and what they call cup and char pepperoni. Delicious.

Ppl in the comment didnt get whats so special about the pizza. It's the dough starter!! Years ago before instant yeast was invented, bakers make their own 'mother cocktail' with mix of different types of yeasts and whatnot. This starter have to be 'feed' everyday so the yeast won't die! And every mix is different thus giving it a unique taste. Not so many bakery uses starter anymore because there so much work and consistency in it.
And oh- if you're consistent enough, a jar of starter could lasts hundreds of years!
