  • Francisco Gómez heads to Yucatan to learn the secrets of cochinita, a pork dish made by slow-roasting the Mexican Creole hairless pig in an underground oven. While exploring the Mayan villages where the pig is celebrated, Francisco meets with revolutionary local chefs, partakes in the pig’s head dance, and, of course, drinks a few beers along the way.

    Mexican cuisine is so damn good. Always love going to this one spot near me in the city...humble lil' hole in the wall kinda place. You can tell it's authentic because a ton of that particular community always go there. Then you know the place is legit.

      Hate to be this picky but the term Spanish there is wrong. You mean either Mexican or Latin, or even better, Latin-American. Spanish means from Spain, unless you are talking about the language.
      People in the US give a lot of importance to certain words without knowing the meaning or origin, and use so many others wrong. Don't even know if you are from the US, it's just a comment.

      Definatly go Southern, all those colors and diffrent foods, its insane man you'll love it. Nothern has alot of the tradition foods that are known in the States and is also beautiful but if you go down South its a completely other world man.

    Born and raised 10 miles from Mexico in Arizona and I speak semi fluent Spanish so I can understand most everything said, but Francisco...man, he speaks so fast!

    So... I became vegeterian about 2 years ago and I had to say goodbye to this. It was (hands down) my favourite kind of taco, my favourite dish of all time.

    +Munchies, with reference to your video description it’s MAYA not MayaN, drop the N. Mayan is only used to refer to the language family, as a descriptor for anything else it’s Maya. Think of Arab vs Arabic one is for the people culture food etc the other solely for language
