Wow this was an amazing technique... I was always scared to put the rice on top of the gravy, thinking the bottom bit of thr rice would get all mushy... good stuff
Sean, the only time rice will go mushy is because they're overcooked and the gravy is too runny. If the rice is half cooked and the gravy is cooked to the right consistency it will never go mushy. Also, top tip never use small pots to cook rice, even if its 2 cups worth, the bigger the pot the better!

Very beautifully explained! I’d personally either top up the rice with some aromatics like mint or rose water/ittar OR do two layers by divving up the chicken and rice into two portions 😊😊
Wow this is the simplest recipe of Dum Biryani I have ever seen. Not complicated at all using only 1 whole spice Bay Leaf which is very staple in every kitchen and Garam Masala and Coriander. Super easy. Dum Biryani is my favorite Indian Dish. I will definitely try this. What I can substitute with Blizted Green Chillies? Will the Thai green chilli Sauce or Sambal Oelek work?
Thank you for your comment. Please do let me know how you found it once you get round to making this wonderful recipe. I'm afraid green chillies cannot be substituted with chilie sauces unfortunately as that would compromise the flavour.

But if you've a relatively large Asian supermarket near where you live, some if not many actually stock these types of cooking pots. Top tip when looking to buy... the heavier the pot the better the results it will give. Hope that helps!

Hi Edyta, thank you for your comment.if you're using 1kg of chicken breast then just reduce all the ingredients by half. That should give you the perfect ratio! Hope that helps! 😊👍
From start to finish I would say 45min to an hour. You can prep the meat with the yoghurt in it an leave it aside for a day in the fridge and then add the rice to cook an hour before serving if you're hosting a dinner party.
Hi Elizabeth, add them in with the meat! And just follow the recipe through. Just make sure they're not cut into small peices as they'll cook quicker than the meat!
I want to make biryani but for my little one, she does not like spicy, any suggestions how to make it really plain but tasty. Iv tried the packet ones but failed. Was still spicy x
It's really tricky especially with our cuisine as we like to use spice in everything. Biryani is a mildly spiced dish and if you want to feed your little one a rice dish why not try my Lamb Pilau rice.
