This works well if you have simple, portrait width pages. I have a much larger in width Excel file to have signed. Is there any way to format the file so the columns aren’t split/disconnected?

I think if you are using the same form for requesting signatures, you may assign the fields then click to save as template. Once its save, the next time you will have to use it is you will change the recipients name or the signers. That will save you sometime.instead of putting the fields one by one.

Do you have to send the document by email for signing? Could I save the document (with the signature field included) in a folder and share the folder? Have the client access the folder and save it?

In the nightmare that is Adobe Sign, you may find date, full name and dropdown fields disappearing or changing into other type fields after sending a document but before it is received for signing. The solution is to stick to using plain text fields for those 3 types. Other fields may also suffer from this problem but I did not use them. (I had 47 fields on my form. I don't know if this was a factor)
