Mandolines can come with a guard that you use to hold the vegetable so you can slice without having to get your fingers near the blade As someone who popped most of their fingernail off without hardly feeling it because of how sharp that blade is I HIGHLY recommend using a guard and cutting glove.
I love to make this, a tip if you want them thinner: just use the peeler to make the strips, less dishes, thinner strips, and no anxiety for finger chopping 😁
I sliced off my R. Thumb tip off, Dr. sutured it back on, it didn't heal well, he ended up removing and letting it heal that way. My teacher said my handwriting was better with my left hand! I highly recommend a guard for the mandolin!!

The fact is that in the USSR it was very difficult to get Chinese cabbage, so they gradually began to replace it with carrots. So in Russia we still have Korean carrot sold everywhere :)

I know exactly what you're talking about. My grandma used to buy it from the deli that used to be by her apartment when I was little. Also had raisins and was sweet. My father loved it. She always served it in these little cut crystal bowls, with lovely white paper napkins with raised details and real silverware. They were the perfect size for fruit salad, pudding, etc. She always made everything even food she served look beautiful. I haven't thought about that in years. Thank you for this comment.

I spent 2-3yrs eating only raw carrots - with the occasional apple. I looked like I'd been using cheap fake tan, and forgotten to wash my palms. My teeth are still lightly serrated..
I like the way that you cut those that’s a good idea cause it’s hard to carrots. Sometimes this makes it way easier and then you get more flavor with more pieces really beautiful too.
I would recommend trying this by grating the carrots. Combining with grated cucumbers or ice radishes also tastes great. I also would recommend adding ground toasted black mustard seeds and mustard oil instead of olive oil.

Does anyone else wash their carrots if they are going to peel them? I don’t because I’m peeling off the dirty part. I do give them a quick rinse once they are peeled.
I’d personally use lemon instead of lime, and either honey (which I’m not a huge fan of) or maple syrup.. or even molasses. Try this: Carrots + apples (sliced or rough chop depending on how much crunch you like) + Catalina or French dressing (the orange dressing lol). Best, quick summer salad ever. I love using Honeycrisp apples- they go so well with almost anything.
I use to hate the taste of carrots. I couldn’t even eat them on a carrot salat. Until I found out what organic carrots taste like. Wow! What a difference.

I like to do that with soy sauce, rice vinegar, sesame seeds, and toasted sesame oil. Yum.
Or use the grater on the side with the biggest holes. Like they (kinda) do in Morocco
