Make this fluffy Non-Alc with Toro Chicago

  • We join Toro Chicago's Beverage Manager James Vanderbosch as he shows us how he makes the bar's Non-Alc Clarita cocktail.
    Vanderbosch is a strong advocate of Non-Alc cocktails, believing that the same amount of thought and intention should be given to them as we give to their alcoholic cousins.
    As he mentions, more and more bartenders are choosing a non-alc lifestyle, so with that inspiration, maybe it's time to make a drink like the Clarita at home.
    Part of a special, limited-time, spirit-free menu at Toro, the Clarita is an easy-to-make sour-style drink that is light, citrusy, and beautifully frothy.
    Using a backbone of Almave Non-Alcoholic Blanco Tequila (although Vanderbosch comments that you could easily swap that out for another light non-alc like Seedlip), he then shakes this with Coco Lopez, Sour Mix and Blood Orange Juice.
    Vanderbosch recommends (especially with a non-alcoholic drink) that you wet shake first, then strain out the ice and dry shake.
