Ampalaya Bitter Gourd (Bahay Kubo Ep. 3)

  • Love it or hate, just eat it. It's good for you ;)
    once you've peeled and cut the ampalaya, it's important to soak it completely in lukewarm salted water. 5 mins works, but will still be bitter, for the best result and to try appease all tastes, go for 3 hours or overnight.
    Ginisang Ampalaya at Itlog
    (Stir Fried Bitter Gourd with Egg)
    1 bitter gourd, cut and soaked
    1/2 red onion sliced
    2 cloves of garlic minced
    2 eggs
    10 cherry tomatoes sliced in two
    1 tbsp olive oil
    salt and pepper to taste
    1. cook all the ingredients except for the ampalaya and eggs for 5 mins on medium heat. Make.
    2. toss in the patted dry ampalaya, fry for 5mins. When the Ampalaya is in the pan for about 5mins, don't touch it, let it cook and let the steam come out ; that will help remove additional bitterness.
    3. scramble the eggs and toss them in for a minute. Toss tougher.

    I love how my dad cooks Ampalaya. He's putting corned beef and eggs and konting sabaw. I'm not eating ampalaya because of it's bitterness but when it is cooked by my dad, I found myself eating a lot of it.

      Marinel C. because most of the famous artists in Philippines has a house helpers (maids) to shop for them or others prefer going on market themselves but they don’t go on wet market they always go on supermarket or grocery store

    A tip i also learned from Kitz Clutszina (a filipino cooking channel) is when cooking ampalaya don't mix it so it won't release its bitter taste, just cover the pan until it cooks. I guess it work cause he fed it to his toddler and liked it. Haven't tried it myself though

    My favorite😍. What I usually do to lessen its bitterness is that, I slice it by the grove or lenghtwise (not the usual or crosswise) and stir fry it with carrots and okra (of course with the usual "ginisa" trio of tomatoes, onion and garlic). 🤔☺

    I grew up eating ampalaya but in a different dish. Just simply sauteed onion, garlic and pork, then add the ampalaya, vinegar, pepper and salt. Superb 👍👍

    My wife and I like to cook ampalaya with atay ng manok instead of chicken and it tastes sooo good. with lots of egg and tomato and oyster sauce. Sarap talaga! It was just an experiment but turned out to be a crowd favorite and household staple haha

    I cook it exactly the way you did except that I overcook it so it's really wilted as it helps remove the bitterness a bit and so that the tomatoes would have also incorporated its juice into the dish.
    My biggest pet peeve when eating vegetable dishes is when I find pieces of pork with skin. I'm just not a believer of the saying "mas masarap pag may konting taba." So what I do personally when I cook is either I don't put pork at all or just to satisy other people in the house, I chicharon the pork bits and put it as topping only before serving. This really enhances the flavor.

    My father also adds tofu and chicharon in his recipe and it makes a big difference (makes it taste better and adds diff texture). Love your bahay kubo series 😊

    I love this dish. Most of the time, we add meat like ground pork or prawn/shrimps. We sometimes susbtitute tomatoes with canned sardines (with tomato sauce).

    Ampalaya, my favorite veggie here in America. I have to go to Specialty Markets though to buy it. Your recipe is exactly how I was taught to cook it when I used to live in the Phil.

    My mom usually buy and make ampalaya and shes not putting any other ingredients after nya hiwain nilalagyan nya nang asin tapos babad for 5 minutes and then after that shes putting vinegar, and ajinomoto shes not cooking it. The more bitter the more nutrients you get. Love it. Just followed you're youtube channel today it's nice knowing someone, like you na may knowlegde po sa lahat nang bagay baka ma influence po akong mag vlog🤣🤣 Thumbs up. Goodluck and Godbless

    having my mom always have a batch of this at breakfast helped me "pace" myself on my first meal after awakening from sleep. The harsh extreme of taste made me scoop more neutral rice, filling me up and giving my palate a chance to mellow down. I'm sure if I was raised with breakfast sausages and pancake syrup, or fried cheese and bacon with no rice filler between each next bite, I'd have taken in more salt just to feel that satisfaction, this was a neat little health hack I guess she had naturally devised within my fat kid diet routine. I appreciate it much more now in adulthood. Well done food channel reviewing stuff with RUclipsr editing polish.

    I've read somewhere that not mixing/tossing the ampalaya during cooking time will help lessen the bitter taste. I tried it a couple of times and so far it's been effective. 😜

    It's one of my favorite vegetable dishes and I've been cooking it whenever I feel the urge to satisfy my appetite. I never tire eating this during breakfast, lunch and dinner. Some kind of side dish for me that goes well with paksiw and fried fish. Thanks for featuring this dish.

    Yun oh! isa ito sa pabirito kong Pinoy dish. Napaka simple lang at mas gusto ko talaga nalalasahan ang pait, siguro dahil sanay nako. Kahit ganito lang almusal ko everyday, masaya nako. 😊
    Humahanga talaga ako sayo sir lalo na pag sinusubukan mong magsalita ng diretsong tagalog sa tuwing bibili ka sa palengke kaya ipagpatuloy mo lang.

    Parya was, & still, my favorite when growing up. I don't know why I loved it so much. In japanese it's called goya. If you add tofu to this same recipe, it'd be champuru. It's delicious. Thanks for highlighting such an unappreciated veg/fruit.

    I’m using salt to reduce the bitterness, squeezing some of the juice. That method is helping me get rid of bitterness

    Parya in ilocano refers to leaves that become slimy like okra when you cook it. An ilocano way to rid the bitterness when cooking bitter melon in pinakbet is to simply toss the ingredients in the pot as opposed to mixing which actually brings out the bitterness even more

    I hated ampalaya when I was a child.... but now I love it.... I also love the indian style bitter gourd...(an Indian friend brought one time at work) they call it Pavakkai Fry ( Kerala Style), thinly sliced ampalaya, marinated with indian spices, then fried.. You should check that one & Im sure you'd love it as well!!! Love watching your vids btw😁😁😉

    We have the same way of cooking ampalaya.. but 1 of the secret to avoid too much bitterness on it, avoid stirring/mixing it continously.

      TheeArlenzo I also hated ampalaya before but got converted about 3-4 yrs ago when our cook angel cooked this very same recipe. Saraaaaaaap pala! The tomatoes and eggs I guess made the diference. And now....I feel like including this to this weekend's menu.😊

    Effective din po yung ibabad sa maraming ice cubes lagyan ng asin or tubig plus salt tapos ilagay sa refrigerator, kahit hindi na pigaan nawala talaga yung bitterness niya.

    Ampalaya is an acquired taste as long as the adults in your life start introducing it to you at an early age. I live in America and I crave for it even decades later. Diabetes is one of the cause of morbidity and mortality of Americans and highest cause of heart disease. But they haven't adapted Asians' affinity for this beloved fruit/ vegetable. Its tender green shoots is delicious in monggo soup , blanched and eaten as side salad with rich fatty meat dishes but best of all in pakbet.

    Hi, what ido is I follow my mom's advice whenever I debitter an ampalaya. Soak the sliced ampalaya into a bowl of water with salt for a few minutes then squeeze the juice out. Do minimal stirring while cooking. And that's it! It really works , just sharing tho.

    ive been wanting to try cooking ampalaya :) excited to introduce it to my family LOL !! leaving the phils in 2001 and migrating here in Canada , didnt bother learning to cook it... its my mom's regular cooking our "ulam" when we were growing up :)
