Harvard Beets - A Holiday Tradition

  • This is a beautiful dish for your holiday table, and ever so easy.
    Ingredients
    2 tablespoons butter
    2 cans sliced beets
    4 tablespoons brown sugar or sugar substitute
    2 tablespoons red wine vinegar
    2 tablespoons corn starch

    Harvard Beets goes really good with pork chops, and potato.

      I have tweaked this recipe from a previous posting using corn starch instead of flour and red wine vinegar. I like the results better.

    I love harvard beets, but no one else in my family does. I use regular sugar and regular vinegar.

    Can't wait to make this with my recently canned beets. I've never heard of Harvard Beets!
    I loved eating beets raw on a salad. So delicious and sweet...yumm. Husband loved them too.
    So I bought several and canned them. Oh, I was disappointed how 'unsweet they were'. No wonder I didn't like beets as a kid :)
    Now I know what do with my canned beets.
    I also, noticed when I canned up some lovely sweet mandarin mini's they were not sweet. Lesson learned. I just wish I new why canning takes away the natural sweetness of fruits and beets?

      Hint: Just a touch -- a tiny pinch -- of salt restores the sweetness. Salt cuts bitterness and allows the natural sweetness to shine through.
