Unfortunately this recipe is designed to be used right away after cooking and wouldn't be safe to can. My advice would be to can your beets plain (with pressure canning), or pickled (with a water bath) instead of as Harvard Beets. That way you can use them to make Harvard beets whenever you want without having to worry about them spoiling as quickly!

Some have both cinnamon and the orange, some just had the orange, and some were spiced ( cinnamon etc not in a hot spicy way). Have you ever made those I would love to get the recipe from you. Certain people complain when I make things to my level of sour tolerance. :) I have been known to use Pickling vinegar instead of regular vinegar. I erred on the side of caution with this recipe though.
Whoops, I must have cut that line while editing the video! Cook time will vary, but boiling will generally take between 40 and 50 minutes, and roasting will take between 50 and 60 minutes. Like with other dense root vegetables you want to cook them until they are soft all the way through.
