Yes, multi-classing is disabled on explorer difficulty but you can still multi-class. All you need to do is up the difficulty when you level up, then drop it back down afterward. Unfortunately, most reviewers never mention this option.
How to make an ultimate buff character that just sits in camp and buffs your party: You have to keep in mind that you can only use long term buffs with this character. That means spells which "last until long rest" or spells that dont have any duration condition. Concentration spells wont work because they expire quickly in open world. You can do this already at character level 4. Get a druid or cleric (either hire one from Withers or use another wisdom companion). Respec him with 1 level into druid and 3 levels into life cleric. The druid at level one gives you goodberries which are 4 free health potions that you can use anytime. He also gives you longstrider which is a flat movement increase buff. The cleric at level 3 gives you AID which is a +5 HP buff until long rest. Also at this level he can cast Protection from Poison which is a fantastic anti-poison buff. If you have to fight in caves or against bandits prioritise this buff. As your level increases your buff-master will get more spell slots so he can cast more buffs but most of the time you will go with Aid and Longstrider. At level 2 druid he can learn Natural Recovery (Circle of the Land druid) which allows him to recover 1 spell slot per day. Alternatively if you want to have ALL the buffs you can hire two helpers from Withers and make one of them a cleric and one a druid and use them both to cast all the spells mentioned above. Just takes more fiddling with adding and removing characters from party. The "until long rest" buffs will stay on your characters even if the buff-master is not in your party. Enjoy going into battle better prepared now!
great video, but one note. Shadowheart should be casting her cantrip sacred flame, it's a cantrip that scales in damage based on character level (not class level) and it benefits from the casting modifier (wis). Using a shortbow is only better if it provides an %accuracy advantage early game, but after level 5 she should be using the 2 dice from sacred flame for better DPS and a better chance to hit since the saving throw scales off her primary casting slot.

It is a Dex saving throw though. You should pair it with Produce Flame, which, despite tooltip, DOES scale with level, and targets AC.
