I’d love to see more Italian soups. Right now I only do my go to wedding, minestrone or ravioli soups. But my “why am I not Italian” daughter would love more Italian then I give her in her weekly life.

we make a similar white bean stew in Greece, I made a huge pot of it couple of days ago. It's just dry white beans (we soak dry beans overnight to speed things up), carrots, celery (stalk and greens all together), and a small container of diced tomatoes, and a lot of water. We let it simmer for 1-2 hours and serve with a ton of bread to soak up the yummy broth! So so so good!

I have made ribollita with chunks of Italian sausage browned just prior to adding onions and I used escarole instead of kale. It was fantastic but I am cutting too much meat from my diet so I will sure try your recipe.

Ribollita! 😻 One of my very favorite dishes! We discovered this about 20 years ago in Tuscany and have been making it ever since. We start ours with pancetta and also use red potato in our recipe and of course stale bread! And also maybe throw some chunks of parm in with the rind to really guild the lilly you know? 😹 I’m the opposite of you, I want my ribollita nice and thick! So yummy!!! I actually made it last night for tonight’s dinner and then saw this video was recommended and had to see how you make it, thanks so much for sharing!

I watched this when you posted it and for some reason, I thought there was butternut squash in it also, so I did all of this exactly with butternut squash. I don’t know why I thought of it since I almost never use it but it worked out well!

I ate this soup in August in Montepulciano in Tuscany.. I loved it soooo much, but the version I ate was with white cabbage and no tomato.. I should try this recipe ASAP!
You will love this!! The tomato is optional and for the greens traditionally we use cabbage or kale, either (or any greens you like ) work 🥰

I freeze mine without the kale, otherwise it takes on too much of a “green” flavor if you know what I mean.

Laura, question about guanciale. Can't find it around where I live. Is it much different from bacon? There are uncut bacons that have more fat than traditional precut bacon. Will it be much different if I use bacon instead of guanciale? I'm contemplating making carbonara.
Guanciale is really one of a kind, if you can’t find it I suggest pancetta (not pre cut, but the hunk and chop it yourself) the fat is crucial in a carbonara!

That’s where I got this recipe from! I spent a week eating around Tuscany back in 2018 and I had the best ribollita of my life cooked by a local chef. It was to die for!
