Soups for autumn and winter are the way to go. I am always cold, and half a litre of hot broth two to three times a day with various stuff in it (I am making liver dumplings right now) is the way to keep me in functional mode. With a few cups of milk tea and an occasional coffee in between, of course. :)
My fall cooking is baking. I tend to avoid the oven all summer due to the heat so once it gets cooler, I bake a lot of sweets and make a lot of baked dinner dishes.
I put in an Instacart order the minute I was done watching this video! Because I’m a professional fat person I made a Gruyère and sharp white cheddar mac and cheese to go along side it! *chefs kiss*

Roasted garlic mashed potatoes, that sound very interesting. May i ask how you make that? Do you roast the garlic in the oven in tin foil drizzled with some olive oil?

After it’s roasted, squeeze the garlic into a stick of butter that’s melted on low heat on the stove and make sure it’s well incorporated. Then mash or whip the butter/garlic mixture into the potatoes with about a cup of sour cream, salt and pepper.

She jokingly said it was so our breath would be too stinky to go out to the barn and make out that night, but it didn’t stop us. This was so delicious! Especially the gravy!! However, you left out the flour in the recipe for the gravy. I used 2 heaping tablespoons. That seemed to work. I will definitely make them again!!🥰😋

Soup for sure! Love the crock pot too. Today I have apple butter going in the slow cooker, and a big pot of creamy corn soup. Both are made with seasonal fresh produce…perfect!
I'm big on casseroles. I make several different kinds on the weekends to ease the stress of cooking daily. They keep well in the freezer reheat easy. What's not to love about that. Plus, the varieties are endless.

In the event you have leftovers we use the meat for tacos. 😋

My favorite meatball of all time are porcupine meatballs. My mother had a special pan she cooked them in that she received as a wedding present in 1958. It was one of those hammered aluminum pans with a lid. I don’t have the pan, but I do make the meatballs!!

Your ability to eat scolding hot food always astounds me. 😄 The last couple of years I stared doing a lot of quick and easy meatball soups using the Asian method were you add liquid to the ground meat instead of breadcrumbs. The mixture develops into a soft paste that you can spoon/squeeze/pipe into barely simmering stock. The outcome is soft spongy and bouncy meatballs. I tried this method with all sorts of meats and all sorts of world flavor palettes and it always comes out great. I even did (piped) quick and easy hot dogs with this method with ground chicken, dry sage, dry chives and white wine, they were delicious. The only thing that you need to pay attention with this method is to cook the meatballs in simmering soup not boiling otherwise the meat will seize up.

I also make scalloped potatoes and squashs alot i have a fabulous recipe for butternut squash that i make alot.

The other, you don't mention temperature or how long to cook the meatballs. Looking it up somewhere else, it said to cook meatballs 15-30 minutes at 350-400 degrees.
A combo I would have _never_ thought about, and this is why Laura continues to be amazing!!!! Another warming, comfort food! Yessss!

I think a big slice of toasted rustic bread with the meatballs and onion gravy over the top, is the right choice here. Will definitely make this!

We put sourdough skillet on rotation in the fall. It's basically like a biscuit topped pot pie but with a sourdough started based crust.
Around autumn, I just love a good old Dutch endive stamppot with crunchy endive, rich with bacon bits, brown gravy and smoked sausage. Yum.

In my family gravy is a beverage.
Fall means my slow cooker gets lots of use. Butter Chicken, Chicken Mole, Swedish Meatballs, Housing Meatballs are some of my go-to dishes.
