Kanom Nab - Kanom Tian - Caramelized Coconut in Glutinous Rice Dough - Lao Dessert

  • One of my favorites - A dessert made of caramelized coconut stuffed in glutinous rice dough wrapped in banana leaves and steamed.
    In the video I forgot to list the salt in the list of ingredients for the filling, but it is included in the filling. 3/4 tsp salt. Please see the full recipe on my website.

    When I was a kid I would stay at a friends house some weekends and their mother was Vietnamese and would make these. I loved them so much that I would pay her $20 to make a bunch for me but over the years, I lost contact with them. It's been over 30 years since I have eaten these and now I am so glad to see this recipe. I am going to the store tomorrow to get the ingredients and I am going to make them. Yum. Thank you!

    Thank you for this recipe. I cannot fold my banana leaves like you did in this video without breaking them or becoming too loose. I decided to fold them in a square shape lol, but the dessert still came out very delicious.

    Hi,, thank you for your recipe,, I have made this desert and it was so yummy .. Although at the beginning I made a little mistake while making dough, but second time I was able to make it properly . M so happy coz everyone liked it too and told me make it in Christmas,, so thanks alot and best wishes from me and my family. Love from Tripura 💖💖💖

      Hello. Yes. The recipe calls for cornstarch, rice flour, and glutinous/sweet rice flour, which are all gluten free. “Glutinous” rice is named for its texture and not its contents.

      Hi, I got the scraper at my local Asian market. I’ve seen the scraper/attachment online on Amazon for fairly cheap, but you’ll have to attach it to your own table or wooden stool.

    Can you make theses week in advance and freeze them.?

      Hello. Yes you can make these ahead and freeze them. You’ll have to re-steam them to warm them up again. It’s a great time saver for when you have a busy alms giving morning.

      chanum0101 It is best with the banana leaves, but can use aluminum foil as well to wrap and steam.

      chanum0101 you’re welcome. You may have to spray the foil with a little bit of cooking spray to help with the sticking.

      chanum0101 my mom sometimes use plastic wraps when theres no banana leaf around,lol. u can also try that, but the leaf gives it an airomatic taste.

      sonie v.kay good suggestion. Corn husks can also be used, especially if you are in markets where corn husks are available for tamales.
