    Once again, your videos are incredibly outstanding, and you go all out in detail. It's great that you showed viewers several methods and recipes!!! I sometimes add a dash of white vinegar in my seasonings just so that it can last a bit longer in the fridge. Many people freeze them into ice cubes and use whenever required. Keep up the great work and hard work prepping and presenting. Your videos are colorful and amazing high quality. :)

    My parents are from Trinidad and I was born and raised in Brooklyn. The pandemic left me with the motivation to start cooking….at the age of 33….don’t judge me. Anyway my confidence grew to cook our delicious Trini cuisine. 2 months ago I used your guidance to make my green seasoning. Yesterday, I made beef pelau. I seasoned the meat with the delicious seasoning. So good!!

    Ok, I'm on RIA overload. I have been watching your videos for like two hours. I am doing a Trinidadian feast for Easter. With these videos, it will be amazing and I feel confident about making roti.

    Ria - my husband's family taught me to make Puerto Rican sofrito and I have been cooking with it for 40+ years. Today after watching your wonderful RUclips videos, I realized that the seasoning I have been making is almost identical to your green seasoning - but without the hot peppers. Thank you for all the instructions for not only the green seasoning, but for the Roti and also recipes including Trinidadian Curried chicken. I have been looking for this recipe for years. Subscribed and looking forward to more delish recipes. Thank you!

      Enslaved West Africans were taken to the Caribbean that is why countries like Trinidad and Tobago and Puerto Rico have some similarities in their food.

    I have a dear friend from Trinidad that showed us how to make this and since we didn't know the name of it we named it after her grandmother which is Agnes can we use all of the same ingredients this is a wonderful way to prepare your Meats after you bring them home and wash them before you freeze them you can put it on the meat that works in any dish that you cook The Taste is wonderful and it will make you a great cook

    I enjoyed your video I'm so proud to be Caribbean I make homemade sofrito all the time nice to see that trinidadians also used anecita and cool cilantro. So now I'm going to make a trini-rican sofrito by add some of your ingredients to mine.. I love that you said that there's no wrong or right way to make it as long as it's made from Love

    Thank you so much for showing the food processor portion as well. I've never owned one, and recently bought one. I've been on a journey of recreating my favourite foods from where
    I grew up in Toronto surrounded by Caribbean food. All of your recipes, especially the curry chicken and potato have completely cured my homesickness.

    Great!!! Personally I like using fresh seasoning so I use a mini chopper..my mother used a stone (lorha) all the time😊

    I enjoyed looking you make this delicious seasoning but I felt great when I was the old hand mill I thought the one I had was old 43 years ago my Mom brought it from TT for me in Toronto but that one looks older. I just really enjoyed this God Bless be safe.

      Karuna Samlal Bhatia Thanks. I don’t use preservatives or chemicals in my cooking. Some people add oil or vinegar but I don’t as I want to control those ingredients in my cooking and recipes. This lasts several weeks in the refrigerator if properly sealed and stored.

      BECAUSE IT IS FRESH WITH NO PRESERVATIVES OR CHEMICALS, STORE IT IN THE REFRIGERATOR IN A TIGHTLY SEALED CONTAINER. STAYS UP TO THREE WEEKS.
