Noodles are made of rice and tapioca flour. The orange color came from annatto seeds. Normally they heat up the oil, add the annatto seeds and remove the seeds after the oil gets the orange/ red color.

For someone from SoCal, it's hard to imagine you have not ventured into Monterey Park, Rosemead, and a bunch of other nearby enclaves to enjoy the plethora of Vietnamese restaurants. In the U.S. $6 may not even be enough for tips.
I never had much of an interest in finding Vietnamese restaurants before I lived in Vietnam...and Rosemead, Monterey Park, etc aren't that close to Redondo Beach
TheMightyAgency, have you been to Redondo Beach much? If not, then you’ll understand the concept of how big SoCal is and the traffic that makes it harder to navigate.
For authentic vendor, he orange color of the soup mostly came from the crab-brain. In Vietnam, you gotta know how to ride the motor-bike and ride your dad around the city. It's more fun, just go slowly.
When I was younger, our neighbours, French farmers, used to kill a couple of pigs, and the next day, would come to our house to give us some boiled pig's blood. It was not bland because they cooked it with chopped onions and parsley. Also, French black pudding (pig's blood sausage) is very good.
The blood "cakes" that's served in things like banh canh cua are bland because they are not flavored. However, the Vietnamese do have a blood sausage that is delicious! I won't eat the blood cakes, but will devour the blood sausage since it's a mix of lots of herbs and ground pork along with the blood.

@@MeowTX Austin is a great city, but they overhype on the food. The Viet food scene there is truly lacking. At least it was when I lived there back in 2015-2016. I'm sure it's better now since covid had lots of Californians moving to TX and other states. Houston is the city for Viet food as they have the biggest Viet population outside of California. I live in the DFW area now in far north Dallas, Viet food is is scarce in this area, but not as scarce as in Austin. And I can just drive a bit down the highly to where all the Viet-owned restaurants are in Garland and Richardson.
Banh Canh cua is my favorite! Nothing like homemade ones. The chewier the noodle the better. I like my noodles super long too. In the US, Pho is much more popular than banh canh. I think Americans arent used to the chewy texture and starchy ingredient. I always have to have it on my birthday. Unfortunately its' hard to find a good VN restaurant in the MD/VA area that serves great banh canh. Perhaps Orange County is the place to go.

I'm from Deep South Louisiana about 20 miles from the heart of New Orleans, I don't think you ever visited New Orleans or south Louisiana we have over 20 million visitors a year in New Orleans and they come here to eat we have some of the best food in the world we have repeat visitors that come here every year just to eat our food is not surgeries it's mainly New Orleans blend of spices and seasonings that will tingle your taste buds anything from seafood stews to amazing soups , grill food toped with our amazing seafood po-boys which is French bread, roast beef you can't compare to anywhere, soft shell crab , shrimp , oysters, fish like red fish, speckled trout, black drum, all season with our on seasoning, blacken seasoning was invented right here in New Orleans, Tabasco is made right here in A very Island, Louisiana, all our seafood is locally caught, our oysters are all wild caught no oyster farms, right here in our marshes which I will compare to any oyster in the world, tks for your videos I really enjoy them , we have the friendless people around bet your girl friend would have the time of her life down here.

Take him to the Mekong delta tour. It is my recommendation for him to enjoy while he visits VN.
The best Vietnamese restaurants outside of VN are in Little Saigon-Orange County , nicknamed the Capital City of the other Vietnam .
