Your take on the herb and vegetable on the side, while I do agree with your point as a chef, I also believe Ba Huynh's reasoning is also valid. The two are not mutually exclusive. As a consumer, I do like the freedom to pick and choose which herb/veg I would like to eat, although I would put everything in anyway. Vegetable on the side is also great for when I can't really eat the entire loaf at once, and have to reheat it later. I like my herb/veg fresh and crunchy instead of warm and soggy from being inside the loaf.
Love Banh mi Ba Huynh (Madam Win). It's close to my university (of Pedagogy, District 5) so I can buy one Special loaf for breakfast AND lunch since it's so massive, and I'm not a big eater. If you like a lot of rich, fatty butter, you might like Banh Mi Huynh Hoa more, but Ba Huynh to me is more meaty and fragrant. If I don't eat the other half of the loaf, I would take it home and air fry it, amazing.

My tip on eating pho is to eat it as is or add very little condiments. Then half way through the bowl, add everything you want. 2 different experiences. It’s great.

I think you need to learn how to read again. Because your reading comprehension is lacking.
The OP stated that halfway thru, you can put whatever you want, and it is his (open minded) tip/opinion. So stop being a hypocrite and let people do whatever that makes them happy without you calling people crazy for being putting “whatever they like to make “their” bowl for “them””!!!!!!

We love visiting America for sometime but right now we choose Viet Nam for living 😊

I prefer hue central style banh xeo. More manageable to eat and better aesthetics. I also prefer the cambodian take on the vietnamese original banh xeo called "ban chev". Its not made to be crispy like the vietnamese version except the edges are crispy. The fillings are usually made with ground chicken cooked with onions and bean sprouts. They never use pork and shrimp. Aside from that, the veggies and herbs are identical.
